Oyster Stew
Very easy to fix and very tasty. I used fat free half-n-half, and it didn't miss a beat. Hmmm, hmmm, another way to make those delish Apalachicola oysters.

Baby Greens with a Warm Gorgonzola Dressing
Very easy to make and tasty. I did not have enough red wine vinegar, so substituted balsamic. Also, cut the sugar to 1.5 tablespoons. Added about an extra ounce of gorgonzola. Yum.
