Corned Beef Rye Bread

The rye bread is really good! I like even more caraway seeds in it! I've replaced 1 cup of the bread flour with whole wheat flour and loved the bread. The sugar can be replaced with more molasses, and tastes sweet! Both times that I've made this, I've rolled the dough for pizza, then spread on sausage, sauerkraut and Swiss cheese. We love this bread!

Tarte a L'oignon (French Onion Pie)

We liked this, but each one of us thought something about it could be improved! One didn't care for the bacon with the onions, one thought it needed more herbs to flavor it, one thought we should use fewer onions, etc! I put this into a whole wheat pie crust, and I used soy milk instead of milk and cream. This might be great for a brunch!

Four Provinces Brown Soda Bread

Great taste! Baking time needs to be increased to 30-35 mins! I used both golden and seedless Thompson raisins. Because of the moisture, the amount of cream of tartar is correct, this was not crumbly. The density and consistency were good!

Gingerbread Pancakes

Rating on the recipe as written, this would not have been pleasant! 6 T baking powder is way too much!!! I used 1 T, and they turned out great! I used whole wheat flour and soy milk to make these into yummy pancakes.

Vegetarian Haggis

Since I've never had "official" haggis, I'm rating this as a vegetarian meal. It's delicious! I used oat groats instead of cut oats, and I know that next time, I'll have to go with cut oats because they will bind better with the other ingredients. Taste, flavor and texture wise, this is great!

Spiced Apple Muffins

I used 1/4 cup honey instead of sugar, soy milk in place of cow's milk, and whole wheat flour instead of all purpose. Anise is a flavor surprise that tastes great! These are heavy, dense muffins, the kind we like!

Finnish-American Flatbread

Great bread! I cut the recipe in half, and kept the whole wheat and rye flours at the same amounts, so have less bread flour. It rose nicely. My bread needed a few more minutes of baking time than what was called for. I'll be baking this again!

Lentil Cakes (Patties)

I cooked a chopped onion with the lentils instead of using soup. These cook up well with the bread crumbs, but they do well without it, too! The eggs really could be elinminated. We liked the taste and the ease of making these!

Curried Wild Rice Soup

I added carrots and cabbage since I didn't have enough cabbage. Using whole wheat flour, i made the roux with the veggies using soy milk. It was strange to strongly smell the sherry, but taste the spicy herbs! It is a satisfying soup.

I liked the spiciness of this thick soup! I only cooked the lentils for 1/2 the time, and they were done. This time, I used a yellow onion. When I make this again, I'll use the red onion. Wonderful vegetarian meal!

Rye Breadsticks

Nice chewy bread sticks! I tried to garnish the tops with caraway seeds, so I sprayed the tops and sprinkled the seeds on before baking, but they don't stay on real well. I love the rye taste!

Comfort food! I subbed pinto beans for the others, so I cooked those with the rye berries. It wasn't until I was enjoying my serving that I realized I had forgotten to add the cabbage! I'll put it in when I reheat this delightful soup! Thanks for the recipe!

Sweet Potato and Curried Red Lentil Pizza

I spread the mixture over the equivalent of 2 crusts as others have sggested. I used extra sweet potatoes to replace the omitted eggplant. A 1/2 lb. of mozzarella cheese replaced the romano cheese called for. We loved the spices! This is a great pizza!

Mini Parmesan Scones

I omitted the cayenne pepper. Instead, I added 1 T Italian seasoning and 1/2 tsp. garlic powder to the dough to make delicious Prmesan Herb Scones! Very good!

I like the way that if you cover them after baking, they stay soft, while the other ones get crisper. I used 2 cups whole wheat flour, and 1 1/2 cups all purpose flour instead of what was called for, and I needed just a little more milk. They rose nicely! Not sweet, really! Very good!

Caribbean Cabbage in Wine Sauce

I used frozen corn, so the presentation wasn't what it should have been. I had been concerned about the wine with the cabbage and corn, but the taste was very mild. I did not use any butter, and it still tasted good!
