Spring Strawberry Spinach Salad

For the amount of spinach and strawberries, the dressing should be cut to 1/4! The taste and the color combination are delightful!

Hot Cross Buns II

I decided to make these without the cross as indicated, instead I used a powdered sugar and sour cream frosting. The buns are delicious! I like the nutmeg more than I thought I would! The candied peel gives these a taste of holiday bread! Thanks for this great recipe!

Molasses Raisin Muffins

I made these into mini muffins, and they went fast! I used currants instead of raisins to keep with the mini idea. I used baking powder instead of baking soda due to personal preference, and it worked out great. The spices and wholesome ingredients have given me another recipe to make again! Thanks!

Black Bean and Chickpea Chili

I doubled the recipe for everything except the turkey. This is great! I did not puree the mixture because I like the chunks of beans, meat and veggies! I love how vivid all the colors are!

I used whole wheat flour instead of the white flour, and honey in place of the sugar. These are light and tasty! I also added some cinnamon, which meant that they smelled good, too!

Grilled Mushroom and Swiss

This is a great tasting sandwich! The mushrooms and spinach really only need 1 tsp. of oil to cook in; the bread need only be buttered with 1 tsp. butter. Next time, I'll grill the mushrooms, and just put in fresh baby spinach. Thanks for the recipe!

Good For You Macaroni and Cheese

These are good when made by substituting whole wheat flour for the all purpose flour and honey for the sugar! They are best when cold, when the flavors of the thyme and fennel really come through!

Ruth's Red Lentil and Potato Soup

Great combination of spices! I didn't have celery, so used mushrooms and an extra carrot. Instead of kale, I used up some dark, leafy green lettuce. Wonderful soup with a super taste! Thanks for the recipe!

Vegan Lentil, Kale, and Red Onion Pasta

Great flavors, but there are some things that I will change next time! I used red lentils, which turned mushy; green ones would probably be better! Red onion looks nice for presentation, but quickly turns to a brownish gray, so I will cook with a yellow onion, and garnish with chopped red onions. Whole wheat rotini was not available, so I subbed with whole wheat noodles, and they worked out fine. This made an enjoyable meal!

Rustic Round Herb Bread

Good bread! i used whole wheat flour. I was going to change the sugar to honey, but realized I had omitted it when I pulled the bread from the oven! There's enough flavor that this bread doesn't need sweetener!

Corned Beef Rye Bread

The rye bread is really good! I like even more caraway seeds in it! I've replaced 1 cup of the bread flour with whole wheat flour and loved the bread. The sugar can be replaced with more molasses, and tastes sweet! Both times that I've made this, I've rolled the dough for pizza, then spread on sausage, sauerkraut and Swiss cheese. We love this bread!

Tarte a L'oignon (French Onion Pie)

We liked this, but each one of us thought something about it could be improved! One didn't care for the bacon with the onions, one thought it needed more herbs to flavor it, one thought we should use fewer onions, etc! I put this into a whole wheat pie crust, and I used soy milk instead of milk and cream. This might be great for a brunch!

Four Provinces Brown Soda Bread

Great taste! Baking time needs to be increased to 30-35 mins! I used both golden and seedless Thompson raisins. Because of the moisture, the amount of cream of tartar is correct, this was not crumbly. The density and consistency were good!

Gingerbread Pancakes

Rating on the recipe as written, this would not have been pleasant! 6 T baking powder is way too much!!! I used 1 T, and they turned out great! I used whole wheat flour and soy milk to make these into yummy pancakes.

Vegetarian Haggis

Since I've never had "official" haggis, I'm rating this as a vegetarian meal. It's delicious! I used oat groats instead of cut oats, and I know that next time, I'll have to go with cut oats because they will bind better with the other ingredients. Taste, flavor and texture wise, this is great!
