Squash and Coconut Milk Stew
This was lovely. My small children loved it. Great quick, low fat family dinner in the week. Used reduced fat coconut milk from Trader Joes to lower calories. It was still creamy and very delicious. Add salt gradually and taste frequently. Also, used less sugar than recommended. Flavors are subtle so season carefully. I will make this again. Used silken tofu and it was creamy and added protein. (Peel squash with potato peeler as it is too time consuming with a knife.) Thanks for the recipe!

Slow Cooker Lentil and Ham Soup
Excellent recipe. Proportions were perfect. I followed some of the suggestions, added stewed tomatoes, a smoked ham hock and extra water. It turned out delicious and is a keeper -- thanks!

Pasta With Spinach Sauce
This was not as good as I had hoped. My family did not really like the cream of celery soup undertones -- tasted liked canned soup. (Which of course it was.) I will try it again, with vegetable stock instead, I think, and add some pureed celery.
