About this Cook
I am a mother of three little girls (4,3,and 1), and a happy wife of seven years. I am new to the kitchen, but am enjoying it more with every new recipe success.
My favorite things to cook
Anything that gets a good review from my hubby!- We tend to lean toward the Mexican cuisine.
My cooking triumphs
The baked salmon recipe in my recipe box was a huge success with my family. In fact I cooked that tonight and there's not a single bite left. My dad said it the best meal I've ever made!
My cooking tragedies
As a new bride, I attempted to cook a chicken dish for my husband. By midnight he was heaving on the bathroom floor. I had to rush him to the emergency room. He passed out twice on the way to the ER. I under cooked the chicken, and he got food poisoning. He required three bags of fluid and much rest to bring him back from my cooking disaster. After that night, he took over the cooking for quite some time. I'm finally starting to "get back in the saddle" and try out new things. I am always very nervous when cooking chicken dishes now- I usually choose to cube my chicken breast before cooking just to be sure it is cooked thoroughly.

Downeast Maine Pumpkin Bread
The BEST recipe ever!!! I followed the suggestion of most reviews and used 1/2 cup of vegetable oil and 1/2 cup apple sauce. My husband ate an entire loaf in one day! my sister in law proclaimed that this was THE BEST PUMPKIN BREAD she's ever eaten in her entire life, and my mother in law insisted that I bring this to every holiday meal from here on through forever! What a hit this was. I'm making it for the second time this week at my husband's eager request. I can not stress enough....THIS BREAD IS AWESOME!

Good Old Fashioned Pancakes
Good bye Bisquick! This recipe is delicious. I added a bit more milk, because the batter seemed to thick for me, I also added a splash of vanilla and a pinch of nutmeg. My children LOVED these pancakes.

World's Best Lasagna
I .ove this lasagna! I made this for my in-laws, and it is the first meal in 7 years that my mother inlaw complimented! Now that's sayin' something :) I have to say, I've made it several times, usually I don't simmer for as long as the recipe calls for. The last time I made this, I followed it to a T and the extra time makes all the difference in the world. I prepared this the night before and it was AMAZING!
