Crawfish Chowder
I give it a 4 only because I added turkey sausage as suggested, but I didn't like it. I also didn't have 2 cans of cream of potato, so I increased the half and half by one cup and added more cream cheese. I took the sausage out of it, and after letting it sit in the fridge over night, it was pretty tasty! I added Old Bay as well, thought it was a nice touch--I think it was a little too fishy for my hubby, he didn't really like it at all.

King Ranch Chicken Casserole III
I changed the recipe a little, combined this one with Carol's King Ranch Casserole. I boiled the chicken in crushed red pepper and chicken and tomato boullion, and used the broth in the soup mix with green pepper, onions and chili powder and cumin. My husband couldn't stop raving about it--and eating it! Definitely a keeper! Next time, I want to try some enchilada sauce on top after the tortilla gets crisped from baking and add cheese on top of that.

BBQ Pie
Really good! I rated it a 4 because I think you may want to tweak it to your own taste! I think a cornbread crust would be really great! And I had the opposite problem from most that I had too much crust! I added more to cover the top, and I didn't expect it to "puff" up so much! I think some corn or beans would be great in it. I used Sweet Baby Ray's BBQ Hot and spicy and it gave it a great kick!
