Best Peanut Butter Cookies Ever

This is really good. not 5 stars good but a really good no flour, in a hurry cookie. I just realzed we had no cookies for Santa tonight and whipped this up in about 20 minutes. We only had 1 egg left so I just halved the recipe. I find that the trick to not have hard cookies is to not overcook them. 8 minutes seemed about perfect. They are a tiny bit dry but still very tasty.

Pumpkin Chocolate Chip Muffins

These were pretty good. Not the best I've ever had. I feel like they needed to be a little sweeter, and a little less dense. I'm not really sure how to achieve that though. These are the changes I made: a full cup of pumpkin, a heaping tsp of pumpkin pie seasoning instead of all the spices, substituted light brown sugar for white, substituted half a cup of whole wheat flour for half cup of the all purpose flour, and used about 3/4 cup of mini choc chips. Perhaps I'll try to make this as written next time to see if I get a fluffier muffin.

Cheddar Biscuit Cups

I've made these 3 different ways now. The first time I had to use the flour substitute because I had no self rising flour. that basic recipe is ok. This time I got a bit crazy. Decided to blend together some of the reviews to see what I'd get. One batch I just added a few tablespoons of cream cheese with half a cup of mild cheddar and pinch of garlic powder. The second batch I added crumbled bacon (2 pieces), a few tablespoons of cream cheese, half cup of mild cheddar and a fresh small jalapeno without the seeds diced very fine, and about 1/4 tsp of garlic powder. So far the last recipe has been my favorite but I still think it's lacking something. I loved the texture way better with the addition of the cream cheese but it made the mixture very moist which made it stick quite a bit to the paper cups. Just a note- paper cups are a BAD idea for this recipe. They stuck SO badly to the muffin/biscuits. Next time, I will add more spice (maybe some of the seeds with the jalapeno) and cut out the garlic. As much as I love garlic, I just didn't like it in this biscuit.

Jalapeno-Garlic-Onion Cheeseburgers

Not sure if I should be rating or not since I deviated from the original recipe. I didn't have fresh jalapeno so I used canned. I should have added more though, not spicy enough with the canned. Also only used one clove of garlic, and added about half a tsp of mccormick hamburger grill seasoning, salt and peppered the outside, and served on grilled texas toast with some grilled onions. I think with the fresh jalapenos and a little extra salt, these would have been perfect. I did add an egg to make sure it didn't fall apart on the grill as well as a small toss of bread crumbs to soak up some of the egg.

Bavarian Apple Torte

this was fantastic. We had my sister over for dinner and between all of us, we devoured it. We all liked it much better room temp, or slightly warm than cold from the fridge. When it was warm, all the flavors blended together beautifully. When it was cold, it just tasted like apple cheesecake. Still good, but not as good as warm!

Broccoli Chicken Casserole I

This is a yummy recipe but definitely needs 2 cans of soup. I prefer cream of chicken, or cream or broccoli or mix the two. I DON'T omit the mayo as someone suggested, it needs the little bit of tang that the mayo brings. I also add in salt, pepper and some sage or poultry seasoning to the soup mixture. This is a perfect way to use up leftover chicken and broccoli.

Apple Squares

These were VERY good. I made some healthy changes to this recipe and it was still delicious. Here are my changes -Half white flour/half wheat -1TBSP milled flax+ 3 tbsp water mixed well replacing the egg (we were out) -one whole small apple, diced small which was a heaping half cup, rather than just a half cup. -replaced white sugar with half white sugar half Splenda. -pecans instead of walnuts The batter was VERY dry when mixed like cookie dough consistency (probably because of my flax substitute) so I added a few splashes of white grape juice that we happened to have in the fridge. Baked at 350 for about 30 min. The problem now, is that I've eaten 3 of them. Defeats the purpose of the healthy changes!

DeeAnn's Cheesy Bacon Cabbage

this was very good. I was only cooking only for myself so I used only 2 slices of bacon, a quarter of a cabbage, and added a clove of garlic and half of a small onion. This is perfect for my low carb diet and is a tasty alternative to mashed potatoes. YUM I rated it only a 4 becuase I think that it really needs the onion and garlic to be a 5 :) Updated to add that while this is very good right after it's cooked. It's not very good the next day. just something to note :)

Raspberry Oatmeal Bars

I made these with lemon cake mix. I didnt care for HOW lemony it was that way. next time I'll use yellow cake mix and just add some zest, and a little lemon juice to the Jam. I think that way they would have been a 5.

Dutch Apple Pie with Oatmeal Streusel

YUM... I can not say enough wonderful things about this recipe. It was probably the best apple pie I've ever had. The lemon added a little bit of a zip that I wasn't expecting, and I may try it without the next time but I also loved it with it. Will definitely make again.

Sweet Restaurant Slaw

This was very good. My picky hubby liked it a lot. However I used half mayo and used less sugar as well. It was plenty sweet with less sugar and mayo added. I don't find that it really needs the oil if you are going for less fat. I forgot the oil the first time and liked it just as well as with it the second.

These are wonderful and very easy. Even my 4 year old picky eater likes them. I do cook them longer than it suggests and add a bit of water if needed. Great inside burritos or alone!

I'm not sure what I did wrong. I was skeptical of no eggs or baking powder but I followed the recipe exactly as directed and ended up with VERY flat cookies. They still pretty good. Also I only got about 30 cookies from this recipe. I made the balls exactly one inch in diameter. I'd like to know what I did wrong because this has so many good reviews, I'll probably try it again. My house was not humid at all, if anything it's extremely dry so I don't think that is the problem.

Janet's Rich Banana Bread

This recipe was as good as the Marjorie Standish recipe I've been using for years, maybe better. I did change a few things. I mashed the banana, used half brown sugar/half white sugar in place of all white sugar, added just a pinch of cinnamon and omitted the nuts completely. This was a very smooth, dense bread. I'll be using this recipe from now on. Thumbs up~!

Quick Quiche

The first time I made Quiche I ended up having to throw it away beucase it was the texture of Jello, so with this recipe I was hesitant to try it. I'm REALLY glad I did. It was very easy to follow. I've made this many times now. I change the recipe just a little since the beginning. I use a deep dish pie dish with 6 eggs, and reduce the milk by 1/2 cup. If you dont want to sautee the onion first try grating it on a cheese grater. You will get all the flavor without the extra step. We've tried lots of filling combo's and the house favorite is ham, cheddar, onion, and tomato (squeeze all the seeds out or it will be too watery) Sometimes I also add some minced garlic and it adds a nice flavor. I'll make this over and over.

Veggie Fries

I made this recipe tonight, in attempts to get my kids to eat more veggies. I can't say that I was all that impressed. I love veggies myself and something about this recipe just wasn't right. I'm thinking that maybe I marinated the veggies too long because they almost had a pickled taste? Also, I attempted to make this two differne ways, I did half in the frying pan, and half in the oven (at 400 degrees). Next time if I decide to try to adapt this recipe I'll put them in the oven at about 375. Out of all the veggies I liked the white potato the best (I did summer squash, carrots, cauliflower and potatoes) I might try this again without the lemon juice.
