Sausage Casserole

Ok. This was an excellent recipe and I didn't even follow most the reviewer tips. I did however make it vegetarian and it still turned out great - I used frozen veggie sausages. Cottage cheese worked fine for us.

Good recipe overall. I used veggie broth and it turned out flavorful. I think if you can use homegrown or perfectly ripe tomato it would be even better.

Tuna Tofu Salad

This was very good idea - to use tofu instead of mayo - but the end result needed some added spice. I added pickles and some black pepper at the end.

Very good is a small sidedish. Very heavy and fatty so definately not for everyday - but this was good for special dinners or along side very lean food.

I loved this, and the family was divided on it - some loved, some didn't. However, no one disliked it and everyone ate their plate clean. Went well with bread and salad.

Tofu Parmigiana

Amazing. I prefer more hearty tofu so I pressed it, sliced it and froze it overnight. I also followed everyones tip about dipping in egg/flour/breadcrumbs and baked it on a cookie sheet for about 25 minutes (turning midway through) instead of frying. Served over capellini with salad - wonderful!

Egg Yolk Painted Christmas Cookies

This is a simple and fun activity for younger kids. I had my nephews and niece (ages 3, 5, 7) do this and they loved it and were delighted with the cookies. Not much for flavor, so the next batch I added extra flavoring to the cookie dough I use. Simple, easy to clean and fun.

Pan-Fried Asparagus

With adjustments mentioned by top two reviewers - to greatly reduce butter and oil - this turned out divine. This was very simple, easy to make and delicious. The kids loved, the adults loved it and I am now mixing in broccoli and green beans with asparagus as well.

Red Skinned Potato Salad

I really enjoyed this, and so did the whole family. I followed reviewer suggestions and did 1/2 mayo and 1/2 sour cream. I sub.ed the bacon for vegetarian fake bacon. Served as a side to veggie burgers.

Vegan Cheesecake

This was fantastic. I read the other reviews and followed suggestions. I used vanilla soy milk, added extra vanilla, and baked longer than required. I didn't think it was going to turn out till I let it chill in the fridge for about 4 hours. I topped it with a homemade strawberry sauce and it disappeared in about 10 minutes. Everyone loved it.

Zucchini Herb Casserole

I read previous reviews and I followed them. It was fantastic but I am not giving it a 5-star rating because it needed to be adjusted. I triples the spice, except salt, added red bell peppers, cooked the rice in veggie broth and used orgnanic monterrey jack cheese. It was excellent as left overs the next day as well.
