Ken's Spicy Curry Chicken

Ken you're getting a five because I and everyone else really enjoyed this dish. My friend who cooks with coconut milk all the time, told me that 2 tins was far too much and I also left out the chicken broth. The liquid did reduce (it took forever) however, next time I will add the vegetables later as they just turned to mush.

Lemongrass Coconut Rice

Very appealing and fragrant! I love trying new tastes and foods so this was even more of treat. I'm hooked on lemongrass now. I did change the recipe based on comments and a friends' advice. I used one tin of coconut milk and two cups of instant rice. Not a fan of instant anything but this may be the first time this stuff turned out perfectly. Also, I can't stand bay leaves and left them out. This is definitely a pot luck dish. Thank you MrsElaineous!

Great recipe. Like Trish, I used drumsticks as well and found the same problem. Next time, I'll boil the chicken before too. I did like the flavours and it was easy to make as well.

Firecracker Fried Chicken Drumsticks

I loved the recipe but will try this with different hot sauce next time. I found it had a vinegar taste and put it down to the sauce. However, this was easy and the best fried chicken I've made. I really liked the coating. I used only half the oil and it was fine and as with any fried food it has to be watched and tested. My friends and I really liked the crunchiness and moistness.

Southwestern Pasta Salad

Great addition to a buffet table or pot luck! Very pretty and healthy to boot! I use tri-colour pasta as well. I have left out the tomatoes as they can be fairly expensive where I live and no one whose had it with them even noticed. Warning though, I have put in too much lime juice! I now follow the ingredient amounts faithfully and have never been disappointed!

Grilled Lemon Herb Pork Chops

I don't have a grill but followed the recipe and pan fried the pork chops. Best chops that I've had in a long time and I will use this marinade for other meats. The meat was still tender and flavourful!

Peppery Beef Stir-Fry

Great recipe but too much liquid for me! Three stars may be unfair as I did change two ingredients. As fresh peppers were just too expensive I used frozen pepper strips which turned to mush with all the liquid. Next time I will use fresh! I did not have cayenne pepper on hand and used red pepper flakes but it was still spicy enough. This was great when first prepared but the leftovers were a bit too soggy. Next time I am going to use all fresh vegetables and reduce the liquid to a quarter cup of water and soy sauce.
