I'm a 62 year old married grampa starting my fourth career. I've been in the Navy (good chow), down on the farm (more good chow), and making meals since I was a kid (some not so good). I have a casual approach to cooking and I don't obsess about the last milligram of some particular ingredient. In fact, I have some recipes that I call "sorta recipes" because they only resemble recipes. They contain statements like "stand back and toss some in".
My favorite things to cook
I gained an interest in vegetarian cooking because of personal health issues. Vegetarian cooking is not intended to make vegetables taste like meat, although I have sometimes been able to do that. Its about making vegetable dishes tasty and appealing.
My favorite family cooking traditions
When there was more money in the budget we had meat in the goulash! I learned to put in what was available at the time. I still have a laid back attitude about exact ingredients and exact ratios of those ingredients.
My cooking triumphs
A vegetarian chili that sometimes has the carnivores believing I finally added meat and vegetarians whipping me for putting meat in my vegetarian chili (its listed as an option). I have a "sorta recipe" for this that is used now in five states.
My cooking tragedies
You get in trouble real fast by not following directions closely when you are baking things like cakes and pies. Oh well. Maybe I'll catch on to that, too.

Wild Rice Chicken Bake
I had to substitute a few things but following the basic plan gave my family a great chicken and rice casserole enhanced with a few other goodies. Looking at other comments (I've learned to look first) I cooked the rice completely before anything was added to the casserole. The chicken was cooked on the stovetop more than just browned but not completely cooked. I used real celery and some other herbs n spices and I also added cut green beans. My family has invited me to stay

Seven-Minute Pudding
I couldn't get the microwave to do the trick so I used a sauceoan on the stovetop. It did take longer than seven minutes but this was my first attempt at making pudding without buying instant pudding at the store. It was so easy that even I could do it. The family loved it and I'm going to be doing it again..and again. The pudding reminded me of how pudding tasted when I was a kid - and that was 'once upon a time'. Bill

Buttermilk Biscuits
I'm very liberal with substitutions and modifications, especially to use what is in the pantry. I stayed close to the original the first time and used plain Crisco. The second time I added the baking soda as suggested in another review. I increased everything by fifty per cent for a larger batch and I rolled the dough a little thicker the next time for higher biscuits...maybe 3/4 inch. Its a very useful recipe for me to make quick and easy biscuits. Thanks.
