Yummy Sweet Potato Casserole

I used this for an expat Thanksgiving dinner in Budapest and it was a hit! I couldn't find pecans but used walnuts on top of half. Made the potato mixture ahead of time and refrigerated - added the crumble mixture just before baking. One friend said I made her grandma's casserole look bad! Thanks for a great, easy recipe that everyone loves!

Pumpkin Roll Cake

I live in Eastern Europe and pumpkin isn't available but I used roasted butternut squash instead and the roll tasted great! I hosted 12 Americans for an expat Thanksgiving and this was a hit. Thanks for the recipe!

Butternut Squash Bisque

Good base recipe. Next time I think I'll roast the squash in halves rather than cubed - peeling and chopping was tricky. I didn't have cinnamon sticks so I sprinkled the squash with ground cinnamon before roasting. Also added about 1 tsp of fresh grated ginger to the leeks, onions and apples. Used 3.5%milk instead of cream. Didn't use the squash garnish, fine without it! Thanks!

Baked Buffalo Wings

I followed the directions exactly and they came out perfect and crispy. It was my first time making wings and I was skeptical about the flour coating, but they were delicious. I will definitely make them again. I recently moved to Hungary where it's almost impossible to find decent "bar food" but now I can finally satisfy my cravings! Thanks!

Saucy Stuffed Peppers

I live in Hungary and this recipe is pretty close to what you will find here. I used standard hungarian yellow/green peppers and if you lay the pepper down longways into the pan, the rice should cook evenly. I didn't pre-cook the rice and they came out perfectly (about 2.5 hours). Also, keeping with Hungarian taste, I used ground pork. Would also be great with slightly hot peppers.

Spinach and Hazelnut Salad with Strawberry Balsamic Vinaigrette

Great inspiration for a variation on this - the dressing is delicious and I poured it over a salad of mixed greens, sliced strawberries and kiwis, goat cheese and walnuts. Tangy, sweet, and refreshing!

Roasted Vegetable Orzo

This is a great base recipe. I roasted pieces of eggplant, zucchini, asparagus and white mushrooms as well as one chicken breast cut into bite size pieces. I tossed everything into some whole wheat penne pasta and added a handful of fresh basil leaves, crumbled feta cheese and squeezed lemon. This recipe is definitely very versatile and healthy! Thanks!

Soft Chocolate Mint Cookies
