I am a stay at home mom with two little boys, so I'm always looking for quick and easy ideas that even a beginner can master...you'd be suprised at what I can mess up!
My favorite things to cook
I love to use the crock pot, I'm obsessed with making soups,stews, chili things that take all day to be delicious..also a lot of casseroles and concoctions...always looking for ways to sneak extra veggies in for us all!
My favorite family cooking traditions
Other than going out to eat my family didnt pass on many cooking traditions to me. I do have an uncle that has tought me a lot about mexican cooking..and my mother in law is a wealth of cooking knowledge and traditions..I'm trying to soak them all up.
My cooking triumphs
I made quite the batman cake for my sons 4th birthday a few months ago..I was pretty impressed..and according to my kids and husband lastnights spaghetti was the best ever.
My cooking tragedies
Oh boy...too many tragedies have occured when I'm the chef...way too many!

Six Can Chicken Tortilla Soup
this is by far my favorite thing I make, and I've been making it for yrs..but I change it a bit..I use frozen boneless skinless chicken breasts, dbl the black beans..add 2 cans stewed tomatoes (a must) a small can of salsa verde..and a cup of salsa..only one of the cans of chicken broth plus one can tomato sauce.. and some cumin and garlic powder.. top with crushed tortilla chips, shredded cheese, and sourcream... I have people request that I make this for them regularly..we all love it!

Chicken and Stuffing Casserole
I can see how this recipe would be good, but as is..it came out overwhelmingly salty..and I consider myself a salt lover. That was my only complaint though. I was telling my mom about this recipe and she said she made the same thing only the "cream of..." soups were replaced with gravy.. I think I'll search for that recipe next time because this was just too salty for me to make again

Chicken Something
My family loves this recipe.. I always add an ample amount of sliced mushrooms and sliced zucchini..mixed with the soup and rice combo and then more zucchini layered on top..delicious!
