My favorite things to cook
We do a lot of grilling. Italian is my favorite cuisine by far. I love to try new recipes: Jamaican (when it's authentic), Asian, Comfort Foods.
My favorite family cooking traditions
Thanksgiving & Christmas - We always prepare a big meal with fried turkey, homemade cornbread dressing, and our favorite veggies. No one in my family likes pumpkin pie, so dessert is always a new recipe surprise!
My cooking triumphs
I guess the thing I am proudest of is the dressing I make at Thanksgiving & Christmas. I follow my mom's recipe exactly, but the entire family acts like it is the best thing they've ever tasted. Every year since I started making it, everyone asks if I am making the dressing this year.
My cooking tragedies
About 3 years ago, for the first time EVER in my life, I burned a frozen pizza. As if that wasn't bad enough, I put a replacement pizza in the oven since we had two in the freezer, and burned it too. We're not talking a little crispy. It was charred. I guess everyone has a bad day :)

Joel's Jerk Chicken Pineapple Pasta
I made a few changes - more brown sugar and jerk seasoning. I also added some flour to thicken the sauce. Served over rice, it was delicious!

Across the Border Tequila Shrimp
This was awesome! The only reason I'm giving it a 4 is because the sauce didn't evaporate and we thought it was a little too garlicky. Next time I'll add some cornstarch to the sauce to thicken it and cut the garlic in half. Made it with the cilantro-lime rice from this site and there were no leftovers!

Cilantro-Lime Rice
I had to make this recipe twice...when I used regular rice, it was very moist and sticky. I don't know what I did wrong. I started over using Minute rice and it was delish! I too added some extra seasonings to it - garlic powder, diced onion, and a little cayenne pepper. Served it with the Across the Border Tequila shrimp from this site and it was a huge hit! Not a drop left over!
