Key Lime Pie VII
I used bottled Key Lime juice and it turned out delicious! We've lived in Florida for 30 years and tried dozens of variations, but this is the best by far. So easy too. The little "bubbles" never happened for me, so I took it out after 15 minutes. The consistency was perfect! I made it as a surprise for our daughter's birthday. She had a store-bought Key Lime pie, but when we walked in with the homemade version, she was thrilled. She said it was the best homemade she'd ever had as well.

Apple Enchilada Dessert
I have made this dessert several times, always receiving raves for it. I have used fresh apples and canned, but prefer to use fresh Granny Smith's. This is a perfect ending for "Whit's Enchiladas" and Mexican rice.

Almond Wild Rice
Used brown and wild rice and golden raisins. It did not wow anyone in the family,or guest but they ate it. No one asked for seconds. Served it with salmon. I enjoyed the nice change from potatoes.
