My favorite things to cook
I like to create good homecooking that is light on fat and calories but is loaded with good flavor. I love to try my own sauces, salsa and dressings. My favorite things are made with fresh foods and great seasonings.
My favorite family cooking traditions
Family BBQ cooking in Alaska. A lot of fish and putting up of our own vegetables every fall.
My cooking triumphs
Lightening up pizza and lasagne! Finally figuring out that Salmon isn't supposed to be that dry! Also, I've found my own way to make biscuits and pie crusts that aren't like glue! Mastering my husbands favorite ginger cake was by far my best triumph ever!
My cooking tragedies
bread...it falls, it's heavy... I have yet to find yummy desserts that don't grow my waistline.

Stuffed Peppers My Way
I was really intrigued when I saw this recipe as my husband and I have chosen to not eat meat for a variety of reasons. This is one of the first vegetarian recipes I tried. We loved them after modifying the filling quite a bit and made enough for 6 people. Even my daughters liked them and they are pretty picky. I added lots of fresh spinach when sauteing the onions (I used white onions) and garlic in olive oil. I also used short grain rice. I also added more spices. I added quite a bit of Ms. Dash, black pepper and lemon pepper. I struggled with the filling being somewhat bland. I also added diced fresh mushrooms when sauteing the garlic, spinach and onions. Lastly, I topped the peppers with fresh Parmesan cheese. Our guests and my family LOVED these. I'll definitely be making these again.

Parmesan Chicken I
This receipe came out disgusting. Rice so mushy it was unedible and the chicken had to be used for chicken salad. Would not recommend it and will not make it again.
