I made this to go along with chicken enchiladas. This is the second time I have made this recipe!! My whole family loves it! I skip the tomatoes and jalapenos only because we don't care for them. But everything else was followed to a T! Turned out great both times. Thank you for this recipe!

I made these tonight for dinner. Husband and I thought they were pretty good! The only thing I would do differently next time is to use more soup/sour cream mixture and maybe add some enchilada sauce. They weren't dry, but could have used more sauce in my opinion...That is why I gave it a rating of four stars..

I followed this recipe exactly as it was written. I agree that you cannot truely judge a recipe if you change any of the ingredients. With that being said, this was an okay recipe. I won't be making it again. It came out not dry, but it isn't as moist as I like my carrot cake to be. The flavor of the cake was a bit bland to me. The frosting was good, but maybe a little too thick. My kids loved it though!
