Tasty and easy recipe! I added carrots and peas, and tripled the spices. I also make ahead at least 1 day. I double the recipe and freeze half for later. Yummy!

We loved this recipe! I make it at least one day in advance, the flavors really get strong after a day or two. I tripled the spices, we like things pretty hot.

Ham and Cheese Breakfast Quiche

Oh my gosh--I LOVE this! I made several changes, though. I used nearly 2 cups of Egg Beaters (7 eggs), skim milk, jack and colby low fat crumbled cheese, canadian bacon and only 2 T of butter. Tastes fantastic! I make on Sunday and take to work for breakfast all week. Thanks, Kathy!

Cottage Cheese Roast

Wow! I have seen this recipe several times, but was always scared to make it. Sounds really icky. But it was great! My husband even loved it! It really does taste like meatloaf! I added chopped onions and garlic, used 2 1/2 c Special K, put ketchup on the top and cooked for 65 min. This is a keeper!

Tiny Chicken Turnovers

Fantastic!! If you're making for a party, double the recipe. I couldn't get these out the oven and on the table fast enough! Making ahead and freezing is the way to go.

Broccoli Potato Bake

My husband and I LOVE this dish. I saute 1 chopped onion and 2-3 cloves of garlic in a little butter then add that to the mixture. I also us a combo of emmenthaler (real Swiss cheese) and Gruyere. Yum!

Quick Artichoke Pasta Salad

This was good and wonderfully easy, though a little bland for our taste. Next time we'll try adding red onions and pine nuts and using fresh basil. Great for a quick dinner!

This is the best homemade chicken salad I have ever had! I used walnuts instead of almonds and apples instead of grapes. Used light mayo and light whipped cream in a can. Yummy!

Mostaccioli with Spinach and Feta

Tastes great, and so simple to make! I added onions and mushrooms, and used canned whole tomatoes instead of fresh. I thought the feta was a bit strong by itself, next time I will reduce the amount of feta and add some cream cheese.
