Catherine's Spicy Chicken Soup

Reviewed: Jan. 31, 2010
I left out the whole tomatoes and used 2 fire roasted tomatoes as the diced tomatoes. I added some chopped celery, julienned carrots, squash, and some rice. Instead of the tomato soup, I used tomato sauce. I used black beans instead of chili beans. Everything else was done as written.

Orange Cake

Reviewed: Dec. 20, 2009
I used orange cake mix and vanilla flavoring. I added 1 cup of chopped fresh cranberries, which was a great addition. Next time, I think I may make a glaze using Grand Marnier orange liquer.

Savory Chicken Breasts

Reviewed: Jan. 19, 2009
I changed the recipe somewhat and the whole family really liked the end result. I used 6 slices of Swiss, added some bacon bits, a splash of white wine, and mushrooms, doubled the milk and used both cr. of chicken and cr. of mushroom soups. I liberally sprinkled the chicken with garlic powder, pepper and a French herb blend of seasonings. Next time, I may leave out the bacon bits or use real chopped bacon I have fried. I melted the butter and mixed it with Panko bread crumbs. I liked the topping.

All-Around Good Smoothie

Reviewed: Aug. 7, 2008
I used Weight Watcher's white chocolate cheesecake flavored yogurt and it was delicious. I considered adding a little Splenda, but decided not to since it was already a light refreshing taste. I left out the flax seeds.

Easy Grilled Chicken Teriyaki

Reviewed: Jun. 19, 2008
I used about 3/4 cup of teriyaki sauce with sesame seeds already in it, 2 tsp. lime juice, a hearty squeeze of honey from the bottle, 2 tbs. minced garlic, and a small can of pineapple chunks(including the juice). These were the things I had on hand (no sesame oil). I marinaded chicken tenderloin strips in this for about 2 hours. I sprayed the grill with olive oil then put the chicken and pineapple chunks on skewers and grilled them. The whole family enjoyed this yummy "chicken on a stick."

Mom's Squash Casserole

Reviewed: Jun. 19, 2008
I use seasoned stuffing mix in mine instead of the croutons. To make this super easy, you can buy 2-3 cans (depending on how squashy you want it to taste) of squash with vidalia onions already included in the can.

Italian Sausage and Zucchini

Reviewed: Jun. 19, 2008
I like this better when I use kielbasa sausage instead of italian sausage. With this, I add some crushed red pepper to give it a little bite. I use the tomatoes with italian seasoning, but I also add some more italian blend seasonings of my own. I have also tried this including chucks of green/yellow peppers. This is good either served over pasta or rice.

Golden Rum Cake

Reviewed: Mar. 22, 2008
I made this into a banana rum cake. I used pecans instead of walnuts. I used butter pecan cake mix instead of the yellow cake mix. For each of the 1/2 cups of rum, I used banana rum. I used all the other ingredients as directed in the recipe. I did boil the glaze mixture to cook out the alcohol. I made this 3 days in advance so all the flavors could blend well. Every time we have our group over, they request this cake. I am more than glad to cook it because it is EXCELLENT!
