Carrot Cake III
I made this for Christmas dessert and it was delicious! I am known for messing up cakes, but this one got rave reviews. I added a bit of crushed pineapple and used a little less oil. Also, per other reviewers, added 1/4 tsp of nutmeg and an extra tsp of cinnamon. The recipe adjusted beautifully for high altitude - awesome!
