About this Cook
I'm a married mom of a 6 year old, and a 4 year old. I never really cooked much after I moved out, before I met my husband. Over the years I've slowly learned how to make more and more meals, until I can now improvise easily.
My favorite things to cook
Pasta. Wraps (with anything from beans, to chicken to beef fillings). Rice-Messes (rice with any meat and veggie mixed in - sometimes with a can of soup). Enchiladas. I also just got a nice 6qt crock pot, and am trying lots of things in it. I've been finding some tasty and easy bread recipes, that the kids can help me with.
My favorite family cooking traditions
My parents made Schnitzel and Spatzle for my birthday almost every year. It was mainly a special occasion dinner which we also had many Christmases. And Christmas eve was always snack food: cheese, crackers, pickles, olives, meats, etc. My husband and I picked up this tradition and continue it. We like to add some gourmet goodies in there that we don't buy throughout the year
My cooking triumphs
I have experimented with new things more the past 4 years. I even surprised myself with an awesome eggplant casserole. I also make a to-die-for peanut butter pie, and rum chicken marinade.
My cooking tragedies
Yorkshire Pudding is something I have yet to master. I burnt rice in a microwave once because I forgot to add water. For the longest time I couldn't bake anything - even package cupcakes I managed to ruin. I'm getting better now.

Famous Butter Chicken
Did this recipe with regular saltines, as I did not have the round butter crackers on hand. Still came out incredible. You don't need salt as the crackers add enough of it. But I was so surprised how juicy the chicken remained!!!

Pumpkin Biscuits
This was an awesome recipe, and a great way to use leftovers. You may have to alter the amount of flour depending on how moist your squash mash is, but you don't want it too stiff. Cut and lift carefully, placing a little bit of flour on your surface so it wont stick as you cut. I made it the original way, and improvised 3 other ways. I found that the original recipe is not as good as my alternates. I used leftover butternut squash, with ranch dressing & italian seasoning; mash potatoes with milk & horshradish; and sweet potato with italian and garlic. Much better than the pumpkin & nutmeg/cinnamon!

Potato and Bacon Salad
Ad-libbed some of the ingredients (didnt' have celery on hand) but I love the combo of mayo and dijon with the bacon. Very tasty
