Black Bean Tortilla Casserole

quick and easy dinner with so many possibilities. Add chicken or beef. I don't like black beans so I traded for 1 can pinto beans and 1 can Hunts chili beans (not chili but chili beans!) I put a can of chopped olives in the layers. I also added a topping of sour cream. Lots of choices with this recipe.

Chocolate Banana Bread Pudding

Necessity, the Mother of invention! words to live by for me, lol! OK no chips so I had these Hershey individually wrapped dark chocolate ( about 1" sq)thins. I broke them into small pieces and added some coconut with them, unbelievable!! This takes this recipe from everyday to holiday dinner status. My hubby said I could sell this for $9.00 a pop at a fancy restaurant!

Boston Baked Beans

This was great! I have a secret addition though that makes everyone go wow! What is in here that's different? Depending on amount made I grate on large apple with the skin on, it is delicious. Adds great flavor.

Scotch Scones

I loved the look, taste,and how easy they were to make. I did change rasins to crasins. They had better color and flavor. I also added 1 TBS grated orange rind it it went great with the crasins.

Cucumber Sandwiches III

I had a high tea for a bridial shower. I served several tea sandwiches, but this was the big hit. I later served them on a summer night with chilled soup. A definite hit with my family.

Roasted Pork Shoulder with Pomegranate Sauce

I made this for a backyard party and everyone loved it. I usually make my own changes, but this time I did it as written. What a great flavor for pork! Not one bite legt, even though I also cooked 15 New York steaks as well!

Sugar and Spice Bacon

I have used this many times and everyone loves it! An easy clean-up tip.. Put about 1" of water in the broiler pan and clean up is a breeze, just por out water and rinse off, no scubbing!
