After-Thanksgiving Turkey Soup
Fabulous soup! I was looking for a way to make the most of my turkey and found it. I did make some changes to suit us. I only used 1 1/2 onions, about 5 Tbsp. butter, 1/2 c. flour, 2/3 c. rice, added 2 cloves of garlic and about 1/4 tsp. basil. Turned out very well. I only cooked the rice mixture about 20 minutes and that was plenty. I also added the half and half at the end. We were all very pleased with it. I will try the peas next time.
