Easy Whole Wheat Peanut Butter Cookies

I'm type 2 so I've been looking for a healthier cookie recipe for when the craving gets too much to ignore ;) This is it! I made these last night and foolishly followed some other reviewers suggestions by cutting the honey in half and adding another 1/4 cup of w/w flour to make the dough more manageable. BIG MISTAKE! they tasted bland and the extra flour ruined them, making them so flaky and brittle that you couldn't even pick them up. Threw them all away after two cookies. Then I tackled this recipe again today and did it exactly as is except I also used Splenda Brown Sugar Blend in place of regular brown sugar, and it came out 1000 times better. I had friends over for dinner and they said they couldn't tell the difference between these and regular peanut butter cookies. So why 4 stars? Because I can tell the difference ;) But truly is an AWESOME, healthy, alternative to the fatty, carb filled, evil twin! Amazing for a whole wheat cookie.

Pasta/Pizza Sauce

I've tried a couple pizza sauce recipes on this site and never really liked any of them, until I found this one! As others noted, it's a terrific base to start with and tinker to your tastes. I added 1/4 tsp of marjoram and 1/4 tsp Italian seasoning in addition to the called for spices. I also cut the sugar and grated Parmesan in half and omitted the wine. after simmering i turned the burner off and let it sit there on the warm stove covered while I baked cookies and prepared the whole wheat pizza crust so that the flavors would have time to blend even more. It turned out fantastic! I had friends over for dinner and they raved! Definitely a keeper in my recipe box. Thanks!!

Slow Cooker Beef Stew I

I was going through my reviews and noticed i NEVER rated this yet added it almost two years ago haha! This is a simple, easy, fantastic stew recipe. I have made it many times and there is never any leftovers! Sometimes I like to add a packet of Lipton onion soup mix to the pot for a little extra zest!

Exquisite Pizza Sauce

I was all excited about this recipe due to the enormous amount of positive reviews. Unless you like sauce thats overly sweet and way overly spicy, avoid this one.

Amazing Whole Wheat Pizza Crust

I've been looking for a whole wheat pizza crust recipe for awhile as I'm type 2. I made the recipe as is, I only subbed honey for the sugar, and blended in a few cloves of crushed garlic and a blend of Italian seasonings to the mix and it came out light and delicious! It was my first attempt at making pizza from total scratch, even the sauce (which i did not like, but thats a review for another recipe). Topped it with pepperoni, black olives, fresh mushrooms and artichoke hearts! was a total hit! It's not as good as old fashioned "horrible for you" pizza crust, but it's excellent for what it is, a healthy whole wheat alternative.

Crispy Potato Pancakes

I was thinking of Mom today and missing her. Back on the farm in Vermont, where I grew up, and incidentally, the one she grew up on as well, she used to make the most wonderfully simple, yet wonderfully delicious potato pancakes, for all five of us kids! We'd all get excited and it became a weekly staple. So many recipes call for corn meal this, milk that, cream even! I was longing for the simple goodness of my childhood, and I found it in this recipe, thanks very much! light, crispy and slathered with good ole French's yellow mustard! Mom would be proud ;) A definite keeper.
