Cranberry Waldorf

This was really really good. I used dried cranberries (vs fresh), Braeburn apples and chopped pecans (vs walnuts). Refreshing and healthy!

Whit's Chicken Enchiladas

I received the 'BEST I EVER HAD' reviews with this base recipe. I made a few adjustments. Cooked 5 breasts in chicken broth (not water). When I shredded those, I sauteed chopped onion and 1 C. frozen corn in 1 T. oil. Then added back the shredded chicken. Add 1 can of Rotel Mild chopped tomatos, dash of cayenne pepper, and 1/2 packet of Taco Seasoning. Let it simmer a bit, added the cream cheese and 1 C. mixed shredded cheese. And the rest is history. Topped it off with small can of Evaporated milk, then can of Enchilada sauce, cheese adn black olives. Oooh, so goooood!!!!!

White Bean Chicken Chili

I give it a 4 because I thought of it more as soup, not chili. I even added some cornstarch mix to it, to thicken it up. It had good flavor though. I made some cornbread with it, but I really liked eating it with Tostitos scoops, and sour cream. Might make again, but hubby isn't sold on it.

Dalmatian Cupcakes

These were pretty good. It works best if you drop in some batter, then the cream cheese filling, then another drop of batter on top. This helps the cupcake bake upright. If you just put in the batter and drop the cream cheese filling on, then bake, they come out flat. I made my own buttercream frosting, with a few drops of almond extract.

Blueberry Peach Cobbler

Mine didn't turn out so well, and I bake all the time. The top browned nicely, and my toothpick came out clean. After it cooled for a few hours, we dove into it and the topping was all gooey underneath, like pancake batter, and got into the fruit. Not sure about it... but I might try again later.

Shepherd's Pie VI

Added worchestershire to beef after draining to add flavor, and before adding the broth & ketchup. Oh, and added cooked sliced carrots and sweet peas instead of mashed carrots. Veryyyyy good!

I used to make this about 15 years ago...I learned it in Home Economics class in High School. It was fun to make again, I loved the tip with sprinkling cheddar cheese - nice touch and flavor!!

Shrimp Fettucine Alfredo

Yummy! This is the best I have ever made. I sauteed 3 Tbsp. butter, garlic, diced onion, pepper, and shrimp. Then, I removed shrimp (so it didn't overcook), then made the sauce. I also added 1/3 C. cream cheese as a thickener. (Tip: Bread crumbs works well too). Then served over wheat angel hair pasta. It was sooooo good!!

Rhubarb Bread I

This is definitely a keeper. I made a few alterations, but it's mostly original. Just split the flour half/half white and wheat flour. And, split the oil, 1/3 cup oil and 1/3 cut unsweet. applesauce. I added and extra 1 tsp. vanilla and cinammon to the batter. Also, put in 1/2 cup more rhubarb (love it). Great recipe, just mix some powder sugar and lemon juice, and drizzle over loaves. Yummy!

Didn't like this at all. I cut the butter down by half and was still too much. I felt like it tasted too fatty between the fish and butter. Didn't get crispy at all.

Fiesta Scrambled Eggs

Made this for my coworkers - it was a hit!! I was asked to bring it again. Very good and will make it again. I added small cubed potatoes (2 medium russets) when I sauteed the onion and peppers. Very good!

Baked Slow Cooker Chicken

Made it on Sunday and it was so tasty!! I added a 1/2 cup of chicken broth, 2 quartered potatoes under chicken (no foil), sprinkled 4 sliced garlic cloves and 1 sliced white onion. Garlic powder, garlic salt, ground sage over. Cooked on high for 2 hours, then low for 6. It fell off the bone. I put half of the chicken aside for chicken soup stock for today!

14-Karat Cake

This was delish!!! I didn't have allspice or cloves, but the cinammon was all it needed. I no longer feel guilty indulging in my favorite dessert. I only used 2 cups of powder sugar for the frosting, and also added 2 tsp. of milk to help it spread. Thanks Ellen!

Speedy Salmon Patties

This was so easy to make and very delicious!!! I won over my skeptical hubby. I added 8 crackers and it made 6 good size patties. No need for salt though. I floured each side before putting them in the pan to give the outside a bit of crunch. Butter tends to burn, so I cooked them just below medium heat. Definitely making again!

The Best Rolled Sugar Cookies

Absolutely LOVED this cookie!!! It is very tasty, chewy, and moist. Easy to work with too. I added a few things to the recipe, but followed most of it. Added an extra 1 tsp. vanilla, added 2 tsp. lemon juice, 3/4 C. powder sugar. That's it, can't wait to make them again. I also made sure I took them out of the oven just when they barely started to brown on the edges. They were a huge hit with neighbors and coworkers... brought them in to work at 8 and they were gone by 9am. Topped them with Royal Frosting: 2 fork beaten egg whites, 2 tsp. lemon juice, and 1 tsp. cold water. Very thin frosting that dries smooth and fast. Put on wire rack to drip. Can add coloring.
