Very good recipe. Used sweet corn bread for more flavor. Spiced it with white pepper and garlic. It was a crispy crust and sweet corn flavor. Will make again and again and again.....

This has been the best so far of all the pumpkin pancake recipes I have tried. The first time I tried it I did the recipe to the T but was way to heavy for me and not enough spice kick. The second time I made it I added an extra egg(which made them lighter) and used 1 1/2 teaspoons of pumpkin pie spice and a tablespoon of cinnamon used 2 tablespoons of brown sugar and 2 tablespoons of white sugar. Also a teaspoon of vanilla. Yummy!!!

I MADE THIS FOR MY BOSSES BIRTHDAY OFFICE PARTY AND WAS A HIT! THE ONLY THING IS THAT I COULD NOT FIND CREAM OF COCONUT:( BUT I PURCHASED COCONUT MILK INSTEAD. WHICH TASTED GREAT. AND USED YELLOW CAKE MIX INSTEAD OF WHITE. ALSO POKED HOLES IN THE CAKE WITH A STRAW WHICH WAS A GREAT SUGGESTION, SO THE SWEETENED MILK WOULD ABSORB MORE!!!!
