Chewy Granola Bars

After reading all the reviews, these are the changes I decided to make to the original recipe: 1) Decreased butter to 1/2 cup. 2) Added 1/2 applesauce. 3) Pressed the mixture VERY firmly into the pan. I didn't have any problems at all with crumbling. The texture is quite perfect for my family (husband hates crunchy granola bars). I used chocolate chips on one side of the pan and raisins on the other. Next time I think I'll add a teaspoon of cinnamon. I can't wait to try different throw-ins. Yummy and versatile recipe. (I gave it 4 stars because of the changes I made.) I just realized what these remind me of! Those really yummy Quaker oatmeal bars that are soft and tasty. Drizzle some icing on these babies and they're basically the same thing at a MUCH lower price.

Easy Vegetable Pot Pie

So easy, so fast, and so good. I used a 16 oz bag of frozen mixed vegetables, just because I prefer frozen. I think the thyme adds a great flavor. I made my own pie crusts using the Basic Flaky Pie Crust recipe from this site, which is very easy and very tasty. Crust plus filling only took me about 15 minutes and the pie was in the oven.

Basic Flaky Pie Crust

VERY yummy. I used my food processor, so it was far easier than using a pastry cutter. I used to avoid making pie crusts at all costs until the food processor came into my life. I used butter instead of shortening because I just really love butter. But honestly, it was a bit too rich for me (I used it on a vegetable pot pie). Next time, I may used half butter and half shortening, so I have a tempered richness. Very easy pie crust to make and work with. I probably won't use any other recipe again.

Mom's Coleslaw

Perfect. I like my coleslaw simple: sweet and tangy. I'm not a fan of any extra flavors. This is super good and will be my go-to recipe for coleslaw. Yummy!

Roasted Red Pepper Tapenade

I just looked at the ingredients in this tapenade and knew I couldn't go wrong with it: roasted red peppers, artichoke hearts, capers, parmesan--YUM! I do think I'll use one less clove of garlic next time, but that's only because I'm a moderate garlic lover--I definitely like it but I'm not one of those people who thinks you can never use too much of it. I also think I'll use basil next time in place of cilantro, just because I like basil WAY more and I think it would go with the flavors better. But cilantro is a good, cheaper option. I served this at a dinner party and nobody could get enough of it. They all commented on it being their favorite thing (and, of course, it was also the easiest).

Homemade Black Bean Veggie Burgers

I thought these were pretty good. All the seasonings are pretty necessary, in the quantity given. I used quick oats in addition to bread crumbs and didn't measure them--just added them until the consistency was right. Good base recipe with lots of room for experimenting with spices.

Banana Oat Muffins

We loved these. Like a lot of others, I used half whole wheat flour and half white and substituted applesauce for the oil. They taste very yummy, have great texture, and look beautiful.

Red Enchilada Sauce

I really liked this sauce. I read the reviews before I made it and several mentioned that it tasted more like a marinara sauce. I noticed that a lot of people used their Hispanic background as qualification for ripping on this sauce, so I'll use my status as an Italian girl to say this: What the heck kind of marinara sauce has chili powder and cumin! Those are both pretty strong, non-Italian flavors. Anyway, I find this a great alternative to those nasty canned sauces at the store. I only gave it four stars because I didn't feel like it made enough for a 13X9 dish of enchiladas. I'll double it next time. I may even try canning this. Yummy!

Vegetarian Shepherd's Pie

I was really excited about this recipe and it sounded really good but the finished product kind of tasted weird. I'm not sure the mashed potatoes (with butter and milk) mesh very well with the curry-flavored veggies. Or maybe the parmesan caused a problem. I'm not sure. All I know is that the combination tasted a little like throw up. I hate to say it. Sorry.

Chicken Gravy

I made this with a roux rather than the corn starch because I thought the olive oil would add a little more flavor (since the recipe itself looked like it may need some). I still didn't like it. I'm generally pretty generous in my reviews but this was bland and blah. Sorry, not a fan. I'd rather use the little gravy packets from the grocery store.

Butternut and Apple Harvest Soup

I really wanted to love this soup because I love all the ingredients and thought this sounded like a unique and tasty combination. Plus, it is super healthy. However, something was just missing for me. I didn't use the wine because I didn't have any but it is listed as "optional" so that shouldn't be too big of a deal. I enjoy the mellow flavor but it's a bit too mellow for me. I actually do plan on making this soup again, with some tweaking, because I really, really want it to work for my family. Maybe more nutmeg, maybe some ginger.... I'll keep an eye on these reviews for suggestions.

Pesto Sauce

Yummy! This is soooo good and I, too, am glad that it uses walnuts instead of pine nuts. The only thing I will do differently next time is that I will use only three cloves of garlic rather than four, and that's only because I'm not a HUGE garlic lover. Garlic fans will enjoy four cloves.

Sweet Corn Bread

This is the best corn bread I've ever had in my life! My husband agrees. I have always used the Betty Crocker recipe and we quite like that but it doesn't hold a candle to this one. I only had about 2/3 cup of sour cream in my fridge, so I used 1/3 cup plain yogurt (I figured they're both dairy, they're both sour, and they're both moist) and it really worked fine. This is our new corn bread for keeps.

Peanut Butter Vegetable Chicken Soup

I love peanut butter on pretty much everything so I knew I would love this soup. It is so good. I prepared it according to the recipe except that I added one more clove of garlic. I thought the flavor was absolutely perfect. When I read the reviews where people say it is bland so they added cayenne or curry (???) I have to wonder if these people accept anything as flavorful without it being spicy. Lack of a spicy zing does not equal bland. It's just a different flavor. Spicy is not the only flavor out there. And I personally LOVE the subtle flavor of this soup. It is the flavor of all the vegetables blended together, and the peanut butter adds an extra boost. I think it's perfect. If you're looking for something spicy, make a different soup--don't ruin this one with cayenne pepper!

Chicken Curry III

This was just okay. It is definitely missing something. We had to add a TON of salt. If I ever do use this recipe again, I will add lots of salt as well as some honey or sugar. I don't think it is lacking in the spicy arena, contrary to a lot of other reviewers who also found it bland. It needs something sweet. But it is a decent base.

Oh my gosh, can I give this 10 stars? It's sooooo good. My husband was in awe, too. Followed the recipe exactly and it is the BEST! Very comparable to Cracker Barrel's chocolate cobbler. Yummy!

Hot Artichoke and Spinach Dip II

My husband and I ADORE this dip. I've served it three times to different groups of people and everyone always loves it. I personally think adding the garlic salt on top of the fresh garlic is a bit much so I omit that part. The first time I made it, I just used extra garlic but I thought that made the whole thing taste like garlic only (which some people love but not me). I like some mozzarella mixed in the dip and some melted on top. I also substitute sour cream for the mayo and add quite a bit of milk (about 3/4 cup) to thin it out a bit. Because of all the modifications I make, I give the original 4 stars but it is a great recipe.

Quick and Easy Brownies

These were really good. I only used 1 cup of flour because I don't like my brownies too cakey. Super fast and easy (I think I had it in the oven in under 10 minutes).I love this recipe because it uses cocoa instead of baker's chocolate. That's why I'll use it over and over again. We all have cocoa sitting in our cupboards but who has a ready supply of baker's chocolate?

Spicy Baked Sweet Potato Fries

Oh my gosh, these were so good. I seriously couldn't stop eating them. I think I ate half before my husband even got home for dinner. I baked them at 425 for 20 minutes on one side, 15 on the other, and broiled for about 2. Next time I think I'll lower the temp and broil longer to make them crispier (they were already starting to burn when I tried to crisp them). But they were awesome. Served them with Veggie Burgers from this site and it was an awesome meal (albeit a tad time consuming).

Veggie Burgers

These were so good! I added about 1/2 cup extra oats and the mix was still a bit difficult to work with so I just added some bread crumbs (about 1/2 cup) and that problem was solved. Also coated the patties with bread crumbs instead of flour. I took the recommendation of a previous reviewer and added Montreal steak seasoning (about a tablespoon). It was perfect. Even my husband, a hamburger connoisseur, said they were "super good". That's sayin' something.
