Squash and Zucchini Casserole
This turned out great. The only changes I made was add some fresh basil and I halved the butter and put some olive oil instead. The Romano cheese really adds a great flavor to the recipe. I've never enjoyed an all vegetarian casserole as much as I have enjoyed this one.

Banana Nut Bread I
This is truly the best banana bread I've ever tasted. I did listen to the previous reviewer and I added 2 tsp. of cinnamon and 2 tsp. of nutmeg and only put 2 cups of sugar. I also substitued half of the flour for whole wheat. I did not have shortening and substituted with butter. Next time I'll try substituting with a little applesauce to make it a little healthier.

Crumb-Coated Chicken Thighs
This was so easy and tasty! I like the fact that it healthy without the skin. My husband thought it still had the skin on it - it was so delicious. Thank you!
