Mexican Cream Cheese Rollups
This is wonderful. I made the filling the night before and put it in the refrigerator to chill. I left out the green olives and substituted jalapenos instead. I also put pimientos and salsa in it and it was an absolute HIT at the wedding shower I took it too. I will definately make this again. Thanks for the recipe Kathy!!!

Black Beans con Jalapeno
This recipe is wonderful. It takes a little time to cut everything up, but once it's made you'll be glad you did. Let it sit for an hour or two before you eat it to let the salt and cumin get absorbed into the ingredients. I was a little skeptical about the combination of hominy and black beans because my family can be really picky, but they loved it. Serve it with some chips and enjoy!!! I used Pace MEDIUM hot sauce, but I think next time I will use the HOT sauce to give it a little extra bite. My kids liked it like I made it this time, it was pretty mild.

Apple Crisp III
This is the best apple crisp I have ever eaten. Not to mention the easiest!! I also used 1/2 white sugar and 1/2 brown sugar in the topping and baked it for 50 minutes and it turned out wonderful. I made a 13 X 9 pan of it so I 1 & 1/2 times the recipe.Instead of the cinnamon in the recipe I substituted apple pie spice and it tasted just like the apple pies I make except it doesn't have the crust (which I prefer anyway). The only thing missing when it was done was a large scoop of vanilla ice cream on top, but I plan on having that on hand the next time I make it (which will be very soon). Thank you so much for this recipe, I am sure it will be frequently made.
