About this Cook
Allrecipes has made me a cooking Diva!! I use a recipe from this site almost every day. I became an independent consultant for Pampered Chef last October and have not only been enjoying sharing the products with others, but I LOVE how much easier my cooking life has become!! It's amazing what can be done with the right tools :o)
My favorite things to cook
Lately, I've really enjoyed trying new soup recipes and I love chicken recipes--especially stir-fry. I enjoy making quick and easy desserts that don't include a rolling pin or fancy ingredients. Basically, I am a sucker for the "semi"-homemade recipes that keep my life simple. I do enjoy spending extra time on the weekends to make a fancy dinner for friends and family.
My favorite family cooking traditions
All-day spaghetti. My husband had never had spaghetti sauce with pepperoni in it before, and swears that my sauce is the best he's ever had. I also love cooking with my mom, my mother-in-law and my brother-in-law's domestic partner. Having a big enough kitchen for all of us only happens on the holidays, but we have a great time giving each other a hard time while sharing family tips and "secrets." Cooking family holiday dinners has sort of passed on to me, so I am very grateful for allrecipes.com; all of you are making me look good!!
My cooking triumphs
Finally figuring out how to get rice to come out the same way every time. That one took me quite a few years, for some reason!?! Discovering the use of a slow cooker for roasts was a huge triumph for me, before that, ugh! dry, dry, dry!
My cooking tragedies
Holy cow! The first time I made a turkey dinner by myself (about 20 years ago). The turkey DID NOT cook the way all of the recipe books and family directions said it would. I managed to have every single side-dish ready at the same time, but we had to wait almost another whole hour for the turkey...we ate the side dishes while waiting :-)

Chicken Salad with Toasted Almonds
We really liked this, using red grapes & apples instead of water chestnuts. I also kicked up the flavor/seasoning value by using home-made ranch dressing instead of the mayo/miracle whip, but decreased the amount by 1/2. I served this with lettuce leaves on top, not in the mix. Used french rolls that I lightly toasted with butter & garlic. Yummy!

Heather's Cilantro, Black Bean, and Corn Salsa
VERY good! This recipe made me the hit of the bbq party :) I thought this was going to make way too much, but it was gone in a flash! We ate it with tortilla chips, but I know it would be excellent with fish or chicken, or even just as a side dish.

Jamaican Jerked Chicken
This turned out very delish!! I doubled the recipe and swapped out red onion for green (it's what I had). I only got to marinade this for about 1 hr so after removing from marinade, I sprinkled Pampered Chef Jamaican Jerk Rub on each piece just prior to grilling. The flavor was great and this was very easy, too! I will be making this often this summer :)
