Carrot Rice
Great side. I used cashews instead of peanuts and olive oil in place of butter.

Broccoli Rice Casserole
Very tasty recipe. I added a can of tuna and used cheddar cheese and wild rice instead of processed cheese and instant rice.

Chickpea Cauliflower Curry
The whole family enjoyed this dish. I accompanied it with "carrot rice." Both were delicious. I increased the amount of spices used and used cumin instead of cloves.
