I followed the recipe as it was written. Thank you Elaine for a great recipe that is easy to prepare! Everyone can add what they like to spice it up for their own tastes - so I'll check back to let you know if we change anything. . .

Oatmeal Pecan Cookies

Reviewed: Oct. 10, 2009
I used butter instead of shortening and they needed to cool on the pan a minute or two before moving to a cooling rack. The pecans were not the best quality - and you could taste it the day they were made. But the day after OMG! Also added a slice of bread to the storage container to keep them moist. Raisins would be a great addition next time! Thanks Debbi!

The bacon and pine nuts really make this dish special. I did shred them, but I want to try quarters like some suggested.

Bought boneless ribeyes on sale and marinated only for 3 hours and it was fantastic! Cannot wait to try this overnight and with other cuts of beef. Thanks Macaw06!

Easiest Pot Roast Ever

Reviewed: Jun. 12, 2009
I'll try this again - first I got an English Roast and baked it at 350 for one hour (used a themometer) and let it stand for 10 minutes. Loved the flavor, just not as tender as I know it should be - I'll update you after I try the crockpot and a better cut of roast.

I followed the recipe except made a half batch. We loved the flavor and will make this again. I could personally cut back on the cranberries a bit but that's just me.

Heavenly Chocolate Mousse

OMG This is heaven on a spoon! It is better the next day as others suggested - but who can wait that long? I ate one the day they were made AND one the next day. . . I did over beat the whip cream but it didn't affect the flavor. Thanks for sharing!

Baked in a 400 degree oven for 25 minutes - which was too long - but the result was still excellent flavor! Cannot wait to try on our grill and also in the oven too! Thanks for a great recipe.

Wonderful! I followed the directions exactly, but forgot to turn on the oven! The pineapple did stick but it was easy to lift them from the pan to the cake.

Very good! I followed the recipe and used parchment paper. Next time I'll cut back on the cinnamon a little and try some of the additions others have suggested like cashews, raisens and coconut. We're eating it like a snack until I can get some yogurt at the store!

Breakfast Quiches to Go

Couldn't find garlic crescents (used reduced fat) and planned to sprinkle garlic powder/salt on them but I forgot - added 3 slices of cooked crumbled bacon and will use more next time. I was okay with the onion, but it would be better with sauteed onion. To reduce the fat further I used reduced fat cream cheese and low fat mozzarella cheese. I'm throwing the leftovers in the freezer and let you know how they hold up soon!

Creme de Menthe Grasshopper Pie

Reviewed: Mar. 29, 2009
Good but it didn't set up enough until it froze for 24 hours. Maybe I didn't beat the whipping cream enough, or too much? I agree with some reviewers that say add more creme de menthe, just a bit more. To save time I used a prepared Oreo crust. I'll also try adding green food coloring for better color.

Wow! Thanks for another recipe we love that is simple to make too. I've made this twice in the last week. Only had White Zin the first time, much better the second time with Chardonnay. Also used chicken broth both times as my grocery is always out of vegetable broth.
