Streusel Topped Pumpkin Pie by EAGLE BRAND®

I thought this pie had good flavor after using more of the spices that it called for but it was much too sweet. I plan on using this recipe and experimenting with evaporated skim milk and adding my own sugar because I like the idea of it.

Apple Crisp III

I don't know why but I always thought of apple crisp as a daunting task to take on. Peeling the apples was not fun but I liked this recipe so much that I made it twice in one week. I only had brown sugar so substituted that for white and added some vanilla to the water for extra flavor. Great, easy recipe.

Eggplant Parmesan II

I've been looking for an baked eggplant parm recipe for a while and when I saw the reviews I had to try this one. I needed to bake mine for 10 minutes on each side and could have used more sauce but really loved the flavor of this. I didn't miss the "fried" part at all. Delish!

Crunchy Romaine Toss

I made this last night because I find it hard to keep salads creative. The dressing was delicious. I did use splenda and added chopped red peppers, cayenne and almonds to the salad. I'll be making this again.

Baked Dijon Salmon

I made this with salmon and catfish. They were both delish. I added cayenne to the sauce before brushing over the fish for an extra kick. I think I might try this on shrimp and scallops, too. Thanks for the fantastic recipe.

This was great. Like other reviewers I added the entire can of jalapeno's but still thought it needed more heat. Next time I'm going to sautee fresh peppers and add them.

Buffalo Chicken Wing Soup

I'm from Buffalo so I'm always skeptical about anything with named Buffalo chicken anything ;) With that said, I recently had Chicken Wing soup at a restaurant and wanted to try a less fattening one at home. I made this last night and my husband and I loved it. I added abount a half cup each of chopped onions and celery, a cup of crumbled blue and used only two cans of chicken soup and about 2/3 of the milk called for just to suit our tastes. We also used about a cup of hot sauce because we like things spicy. I'm going to make this again and again.

Cajun Catfish Supreme

I love this recipe. I've made it twice so far. Instead of using two cans of soup, I used one can of fat free cream of mushroom, a cup of half and half and a half cup of white wine. I also added cayenne because I love it. This was served with lemon orzo on the side.

I've made this dip (I've never used it as a sauce) several times because everyone really loves it. There's nothing quite like it. The only change I make is the addition of cayenne.

Hot Pizza Dip

I like to try new things each time I entertain. I found this recipe which didn't sound thrilling exactly but I went with it on the fact that it had so many great reviews. This was a HIT. I loved it, my husband loved it and our guests thought it was spectactular. I think I am going to make this for every gathering in the future. I left out the pepperoni & olives just as a personal preference. Thanks for the great recipe.
