Mild Cheesy Chicken Enchiladas
This is a great recipe. I did however use onion powder instead of chopping onions. I also used a can of cream of chicken soup and a small can of green chiles in my chicken mixture. My chicken was boiled and then shredded as well. I also poured green enchilada sauce over my enchildas and covered them before putting them into the oven. After about 30 to 40 minutes, I sprinkled the remaining cheese on these little babies and popped them back into the oven without the foil for about 5 minutes instead of melting the cheese and sourcream and pouring over the enchildas. Big hit at our house. I will be making this again.

Fast and Friendly Meatballs
Great meatballs!!! I added salt, pepper, onion powder, and garlic powder. They came out perfect. I never thought about making meatballs in the oven but I will be doing it again. I served these babies with Marinara Sauce II (from this site) and angel hair pasta. If you make the marinara sauce, be sure to add 1/2 cup of red wine !>)

Marinara Sauce II
This was a great recipe. Instead of the basil I used italian seasoning because I didn't have the basil. I also used a 1/2 Cup of red wine. The sauce was a bit thin so I added just a little cornstarch to thicken it up a bit. I served this with Fast and Friendly Meatballs (from this site) and angel hair pasta. I will definately make this again.
