Sam's Famous Carrot Cake
Wow! Made for east and received so many compliments. My co-workers enjoyed it the next day as well. Omitted raisins and nuts. Some complained about the coconut taste but I couldn't even tell it was in there.

Baked French Fries I
Could be good--double up on all spices (they really get lost in the baking process) and cut down on the baking time.
