Glazed Lemon Bundt Cake

I love this recipe, the cake bakes up beautifully with a great light texture. The only thing I changed was using powdered sugar for the glaze. But like other reviewers have said the cake has a light lemon flavor, so I might try adding extra lemon extract next time.

Grandmother's Buttermilk Cornbread

hands down THE best cornbread I've ever had. It had just the right balance of sweetness but was tender and didn't fall apart. The only thing I changed was adding a drizzle of honey to the batter at the end. My search for perfect cornbread has ended!

Zulandt's Lentil Casserole

Warm hearty comfort food, nothing beats that. My only alterations were to add some carrots and celery and upped the zucchini. The only thing I will do next time is make a smaller batch, it really makes a lot!

Cinnamon Bread I

I made this cinnamon bread a few hours ago and my family is inhaling it. What a great recipe!! The only changes I made was double the streusel topping and swirled half into the bread, and half on top I also tossed in a handful of walnuts. Some reviewers mentioned it overflowing or needing multiple pans, so I baked it in a bundt pan and it came out great. I'm already being asked to bake another!

Chewy Coconut Cookies

What a fantastic recipe, just the right balance of chewy and crisp. I drizzled some of the cookies with milk chocolate and they were delightful. Next time I might try adding some chopped macadamia nuts and perhaps white chocolate. Even with just the plain coconut cookies they are to die for.

Fabulous Zucchini Grinders

These are truely great sandwiches. Some other reviewers mentioned putting half the cheese on the bread and I found that really helps the bread to not go soggy. It's also yummy with some onions, peppers or mushrooms thrown in with the zucchini but delightful on its own.

Microwave Popcorn

What a great idea! I usually make my popcorn stovetop because I can't stand store bought microwave popcorn. But its nice to have an option with a smaller batch and less clean up. My only complaint was there seemed to be a lot of unpopped popcorn, I'll try microwaving it a little longer next time.

Monkey Bread I

Lentil Soup

I made this soup for my mom and she said it is the best lentil soup she had ever had. The only changes I made were to increase the garlic, oregano and basil, use 2 bay leaves, subbed some of the water with veg stock, upped the liqiud to 10 cups and added extra tomatoes.

Mexican Bean Pie

This was a great dish, I will defintely be making it again! I made a couple alterations though, I sauted some onion and garlic before adding the other ingredients. I also added can of diced tomatoes with chiles and some cayenne to spice it up a little more and used frozen corn instead of the canned.

Vegetarian Jambalaya

I made a few adjustments when I made this.... I used partially cooked instant brown rice instead of white and reduced the oven time to about 15 min. I find good quality canned tomatoes are often better than winter fresh tomatoes, so I substituted a 28 oz can diced tomatoes with most of the juices drained. I also doubled the garlic and chili powder and added a few shakes of cayenne chili sauce because I was out of the powder. With the modifications I made I definately give it five stars, it was a big hit and I will be making this often.

Mexican Bean Burgers

I've made these a few times usually with black beans and find them overall to be better than most store bought veggie burgers. My friends and family even enjoyed them, who aren't vegetarian. The only thing was the texture wasn't as firm as I'd hoped but the flavor is great so I gave it five stars. I also recommend starting with a half a cup of salsa and adding until a stiff mixture forms, two cups is way too much. Also, I saute the veggies first with garlic, cumin and chili powder.

Italian Anisette Cookies

I lost my grandmothers recipe for these cookies, but they were always a childhood favorite. I was so happy to find this recipe, they tasted exactly like I remembered. Just the right balance of Anise, I however like others used only 2 Tbsp of baking powder and had excellent results.
