I moved from Lancashire England to Ontario only a couple of years ago - I love cooking here ... so many beautiful veggies and excellent quality meat to choose from and experiment with - much to my Canadian husband's delight.
My favorite things to cook
Since moving to Canada I love experimenting with the crock pot - I'd never used one in England, on a constant mission to find really good pork recipes as I am not a big fan of pork but my husband loves it so I am always looking for something that might tempt me too! Lasagne, Spaghetti Bolognaise, Chilli can do blindfold without a recipe
My favorite family cooking traditions
My childhood memories were of very traditional English staple food - meat and two veg! I'd never eaten pizza until I was in my 20's and fast food or takeaways were unheard of, so apart from my mum's wonderful lancashire hotpot or cottage pie, I learned most of my skills from the excellent Delia Smith.
My cooking triumphs
I think the greatest challenge I ever had was to cook Chilli con Carne & rice for 75 people.
My cooking tragedies
The first time I ever made Moussaka I fried the aubergines in olive oil and they absorbed the grease - it tasted awful. I didn't make Moussaka again for a many years, until I read a wonderful suggestion in a book, to place the aubergine in boiling water for just 2 minutes - wonderful works everytime and became one of my favourties - finding minced lamb in Ontario is quite a task though!

Cauliflower-Cheese Soup
I've never low rated a recipe before but this was very bland and tasteless, I think it may work better by omitting the carrot and potato, using more cauliflower, a little more celery and definitely onion, a cup less milk, a cup of chicken stock and a teaspoon of mustard powder! I'm a big fan of Cauliflower Cheese soup but this was nothing like it - sorry.

Mashed Potato Cakes
These came out really well - I've made potato cakes in years gone by, the way my Grandma used to, never oven baked - I love this idea, so much easier than pan frying - they do come out best with mash that is quite firm i.e. been in the fridge for a couple of days - I added a little cheese to my mash and they were far from bland. I will be looking for reasons to make mash potato more often now so I can make these again!

Pork Tenderloin with Dijon Marsala Sauce
If there was a higher rating than 5 stars this would be the first recipe I would give it to. I have to say I am not really a fan of pork at all, but my husband loves it so I have long searched for something I might enjoy and I've finally come across it. This really was a delightful dish, the quantities for the sauce were perfect. I smothered my pork with the Dijon and let it stand for a couple of hours before browning. I think it is key to make the sauce in the skillet that you brown the pork in and definitely do not omit the mustard on the pork stage before browning. Freshly ground black pepper on the finished result was lovely. It never ceases to amaze me how reviewers on this site change recipes or methods and then criticise the results. My husband said this was the best pork he has ever had - and he's had a lot!! Thank you Kolagirl for sharing - this is a classic keeper!
