Potato Leek Soup III
fantastic soup. reading advice by other reviewers: i added fresh, chopped garlic cloves (around 4 large ones) with the leeks. i also threw in cayenne when the leeks were almost cooked. after adding the broth: i sprinkled in some oregano. cut the cream by half, and substituted with milk. also, i added a little extra broth! super easy, and so delish...!

Jamie's Minestrone
my boyfriend and i made this yesterday -and WOW! we just loved this soup. it really tastes like minestrone. the pot of soup fed 10 ppl with healthy appetites (served garlic bread alongside). i did make some substitutions: instead of 2 cups of water, used 4 cups of chicken stock (total). used a combination of diced and canned tomatoes. increased the amount of fresh basil (used the whole, small bunch of fresh basil). also, i let it simmer for around 1.5 hrs. the soup cooks itself pretty much - and is so easy. thank you jamie!
