Chocolate Crinkles II
I was looking for a new cookie recipe when I came across this one. I divided this recipe in half just to give it a try. Wow -are these tasty! Not too sweet and nice and chewy. I used a silpat instead of parchment paper and had a very slight sticking issue. As others noted, I used the rack second from the top and the outcome was picture-perfect. I will definitely make this recipe again! Thank You for sharing. **Note: I baked batch #2 on the Silpat for 11 minutes and there was NO sticking issue**

Easy Iced Coffee
I am a coffee junkie and would NEVER dream of purchasing instant coffee. I saw this recipe on the Recipe of the Day, and remembered that I had instant espresso for baking and thought that I would give it a try. It will definitely make this one again. If you like a more full bodied coffee, as some reviewer suggested, go with the instant espresso. I used Ferrera instant espresso, Splenda, and soy milk and this hit the spot. This is true money saver w/endless flavor possibilities! Thank you for the recipe it is yummy. Okay, I am hooked. Went and picked up some VIA packets (one could also get the Taster's Choice version) they measure out perfectly to this recipe. Added 2TBSP. of International Coffee "Vanilla Latte" flavor creamer and added soy milk to measure 6ozs. This was great!!!

Todd's Famous Blueberry Pancakes
These are famous for a reason -they are AWESOME! It was my 1st attempt at pancakes and I could not have been happier. I prepared the recipe as written, with the exception of the sugar- I added 1 Tbls and used canola oil for the melted butter. The results were light, fluffy and super delicious. Will make again and again and use this as a 'plain' pancake recipe as well. Thank you Allison/Todd, a keeper for sure!!!:)
