Churros

This is a great, easy recipe for churros. We make them for a Cinco de Mayo party every year and instead of making them long we make them about 1 1/2" bite size pieces. That way everyone gets some to enjoy. Serve them with melted chocolate...Yum!

Slow Cooker Dump and Go Cheesy Chicken

This was really good. I didn't add quite enough salt and pepper but the chicken was very moist and it made a nice gravy. I added a package of frozen peas on top of the breasts and served it over mashed potatoes.

Bada Bing Bada Banged Potatoes

Delicious! I used my crockpot and put the potatoes in water on HIGH for a couple hours until soft. I then drained the potatoes and poured the butter/oil/spice sauce over and they were perfect! I am going to heat them up for Easter dinner in my crockpot as well.

Baked Lemon Chicken

This was so delicious and moist I can't wait to make it again! I don't like to cook with butter so I used grapeseed oil instead. At the end of cook time I turned on the broiler to crisp up the topping.

Slow Cooker Chicken and Dumplings

This is a basic and delicious recipe that will be great with alterations as well. I used one can cream of celery and one can golden mushroom soups as that is what I had on hand. I also used about 3 cups frozen mixed veggies, omitted the onion and seasoned with salt, pepper, dill, basil and garlic. Instead of water I used about 1 1/2 cups milk. I made a basic dumpling recipe instead of the biscuits and it turned out great!

Quick Eggplant Parmesan

Great recipe, thanks for sharing. I have never cooked eggplant before and was worried about the results but the whole family loved it! I used one good sized eggplant which made about 14 slices and after frying and assembling it I sprinkled it with mozarella and baked it in the oven for 30 minutes. I omitted the red pepper flakes as not everyone in our family likes them and just added them before eating. I will be making this recipe often!

Tofu Parmigiana

Delicious! Instead of making my own sauce I used a jar of Prego Roasted Red Pepper Spaghetti Sauce since we like is saucy. I served it over angel hair pasta and even my picky vegetarian liked it and said I should make it again!

Peanut Butter-Chocolate Banana Cream Pie

This pie is just as delicious as it looks! I loved the taste of peanut butter as well. I needed a chocolate pie so I just used instant chocolate pudding instead. I didn't have baker's chocolate so I used a couple tablespoons of semi-sweet chocolate chips. I will definitely make this again, even my banana hater loved it!

Fra Diavolo Sauce With Pasta

Great recipe, I used only scallops and added 1/2 cup chopped onions to the garlic and basil to the mixture. At the end I stirred in 1/4 cup sour cream to make it thicker. I will definitely make this again!

Cabbage Rolls II

This is a great crockpot recipe! It is too time consuming to roll the meat in the cabbage so I just layered the beef mixture with some raw cabbage leaves and then topped with the sauce mixture. I don't cook my rice as I use 1/2 cup Minute brand brown rice from the boiling bags instead. It turned out great!

Cranberry Banana Coffee Cake

I made this with wheat flour and it was probably a little more dense than with white but it was very delicious. I just used the whole can of cranberry sauce or we would have just thrown it away! I will definitely make this again.

Bread Pudding III

Wow this is tasty! I made a couple changes but nothing to alter the recipe. I used day old cinnamon bread so I omitted the cinnamon and used fresh cranberries instead of the raisins (about 1 1/2 cups). It is really tasty and I let it brown a little on top as that is how we like it! I will make this again and might experiment with the fruits and flavorings. I want to try a rum flavored bread pudding next time.
