About this Cook
Mother of 4. Turning 50. Do Equine Search and Rescue. New EMT and new grandmother.
My favorite things to cook
I probably enjoy baking the most. But, I do enjoy the ooohs and aaahs over my different party appetizer recipies as well.
My favorite family cooking traditions
Lazy pig Fridays. Mexican food potluck with friends. Halloween chilli and cocoa. Christmas breakfast casserole and champaign orange juice. Thanksgiving... everything thanksgiving... from fighting over the giblets to flouring each other up over the pie dough, making that flat cinnamon sugar thing in the oven with the leftover dough, forgetting to serve the frozen cranberry things still in the freezer, having each person tell what they've been thankful for and splitting the wishbone.
My cooking triumphs
Hmmm. Pleasing guests from the south with fried sweet potatoes. Recently, pleasing guests from Uganda with Pilau Masala and a curry meat stew. My simple chicken satay recipe is easy and I have a really great irish stew recipe. Both are always hits.
My cooking tragedies
Nine cornish hens glazed with garlic apricot jam; for this last Thanksgiving. Two hens were not done on one side... and my daughters husbands fiance got one... I got the other one... stupid Kenmore oven.

Butter Icing for Sugar Cookies
I also used cream cheese in place of the butter after reading the other reviews and playing around with the recipe. It doesn't taste like cream cheese. And, has a little nicer consistency. I don't like real sweet frosting. So, used 1/4 c. of flour in place of 1/4 c. of the powd. sugar. After I made this recipe a few times this Christmas, playing with the ingredients, I ended up being pleased wih the real vanilla (with about 1 3/4 tsp. clear van.), almond and then tried the cherry flavoring. All three were huge hits and set up very nicely and shiny within 2-3 hours. Of course it is winter and the dry heat probably helps. After changes, this is my new cookie frosting recipe. With them, the frosting tastes as good as the not too sweet sugar cookies I put it on.
