Chicken and Spinach Alfredo Lasagna

Very delicious, but plan on it taking about 3 hours to finish. We ate late, but it was worth the wait. Instead of 3 cups of heavy cream, I used 2 cups of 1/2 & 1/2 and one cup of skim milk. Also added fresh basil & oregano because I have so much of it. We loved it.

Authentic, No Shortcuts, Louisiana Red Beans and Rice

Very disappointing. Even though I cut back on water and added extra spices, it was still watery and blah. I'll go back to the packaged red beans & rice with andoille and some fresh onions & peppers.

This was awesome! Pretty much followed to the letter, but used fresh herbs instead of dried, and increased the amount. Just because I have lots of fresh herbs growing right now.

Cheesy Baked Cauliflower II

The recipe as written was very good, and I didn't make any changes. The only thing I'll do differently next time is drain the dish before serving. Although I drained the cauliflower after cooking, there was still a lot of water on the plates when I served it. Very good though.

Excellent, easy and fun to make. If you put them in the paper bag, though, they get pretty hard & crispy. Next time, if we want to stuff them, we'll try the damp towel method.

Paella I

I received a paella pan for Christmas and decided to try this. Along with the pan, I received some very short-grained rice imported from Spain, used especially for paella. The recipe was great! The only changes I made were to substitute some scallops for the chicken and left out the wine because I didn't have any dry white. In reading about paella, I learned that the rice is actually supposed to cook until it's a little brown & crispy on the bottom. At least, that's how they like it in Spain.

Pasta Primavera with Italian Turkey Sausage

I changed this recipe so much that I probably shouldn't rate it, but I will anyway. I didn't have zuchinni or summer squash, but I added small-cut broccoli, mushrooms and frozen peas. We all went nuts about this and stuffed ourselves. Like many users, you can vary the veggies and it's still great.
