Jamie's Cranberry Spinach Salad

I followed another reviewer's recommendations and added blue cheese and did the toasted pine nuts and sesame seeds rather than the butter/almond combo. I LOVED it - had enough dressing for the next two nights. I would try the almonds next time. Another nice addition is thinly sliced red onion.

Roasted Cajun Potatoes

These were good and everyone at my dinner party liked them but we also agreed that while they had heat, they didn't have as much spice/flavor as we would have liked. I think just a bit of garlic salt would do the trick.

Chili Dog Casserole I

I made this for a 4th of July party and everyone loved it - to my surprise. I tore up the buns into bite sized pieces so that people didn't have to worry about cutting at all - also browned them a bit before putting hotdogs on top (on broil.) I added the mustard and it really added a nice tang. Instead of putting onions in (which I'll do next time) I served diced red onions for people to sprinkle on top. Will definitely make again - serves a lot of people and VERY easy to make.

Mom's Zucchini Bread

Excellent bread. I too added about 3.5 cups of zucchini - and it was fine. In my second loaf, I added mini choco-chips and it was delish! Highly recommend.

Zucchini Pasta II

I had some zucchini from the garden to use and some leftover grilled chicken breasts. Tried this recipe and it was GREAT! Amazingly I had everything on hand except for the roasted red peppers. The fresh chopped basil and parmesan really round out the flavors. I also like the grilled taste from the chicken breasts - great way to use leftovers. Will definitely make again!!

Shredded Beef for Tacos

Turned out great. Definitely recommend that you cut the roast so that it's all submerged in sauce or broth while cooking - tends to get dry. Also followed advice and added cilantro and onions after shredding so that the cilantro didn't lose its flavor.

Orange Cake

Everyone loved this cake! I too used orange extract instead of lemon and although it didn't taste like an "orange" cake it was good. I'd call it a Citrus Cake. Used a cream cheese/whipped cream frosting (Called Whipped Cream Frosting on this site) in between the layers as well as on top. Also put some sliced strawberries in between the layers. Will definitely make again.

Fried Cabbage II

I forgot to add the vinegar but this was a hit at my St. Paddy's day dinner. Decided to cook this instead of boiling the cabbage. Instead of water I added some chicken broth to the pot. YUM!

Bacon Roll Ups II

Got some good reviews from male guests but I felt it still needed some more pizzaz. will season the cream cheese more next time and will buy better quality bacon.If your bacon is TOO fatty it's just a greasy mess.

Cottage Cheese Chicken Enchiladas

DELICIOUS but messy looking once I served them. Once you pile the sauce, cheese, and extra chicken on top it looks more like a casserole than actual enchildadas. Some were skeptical about the cottage cheese but it really was good!

I made a tin of goodies for the holidays as gifts as this "cookie" was the favorite!!! You DEFINITELY need to use the foil - I even sprayed it with Pam to make sure that the "toffee" didn't stick at all. This is a GREAT recipe and is very esay to make!

Double Chili Cheese Dip

This was a definite crowd pleaser! I made it in a small casserole dish so all you saw when I pulled it out of the oven was the bubbling hot cheddar on top. Everyone loved it and I'm making it again this week!
