Spinach Pumpkin Swirl Quiche

Good, this is like nothing I have ever made before. I added ground up garbanzos instead of the bread crumbs to the spinach layer. I think it would be even better if you spread it on a cookie sheet so that it could get crispy. This is so colorful, it is amazing to think that it is completely natural.

Grilled Eggplant, Tomato and Goat Cheese

Very good. I marinated the eggplant in balsamic vinegar, garlic salt, and Italian seasoning. I don't have a grill so I baked the eggplant for about 15 minutes/side at 450F. Then I added the tomatoes and cheese and broiled it on high for 3 minutes.

Tasty! I added some tomatoes and fresh oregano (I didn't have cilantro). The rice vinegar and tomatoes balances the spice with a nice sweet flavor.

Exotic Indian Cabbage

I followed this recipe exactly except that I used a cauliflower instead of a cabbage. I love Indian food, but there was at least one spice in there that I didn't like the flavor of. Honestly, I am not sure which spice it was because I have never cooked with many of the spices in the recipe before.

Red Lentil Curry

Yummy, one of the best lentil dishes I have ever made. I added zucchini, orange pepper, and a couple serrano peppers for texture and spice. I didn't have any curry paste. I browned the onions and then threw it all in my slow cooker on low for 4 hours.

Moroccan Tagine

Very good. I did add some cumin, coriander, fresh grated ginger, garam masala, and kashmiri masala and rehydrated TVP instead of the chicken. I also added an overripe banana, strange as it sounds, it added a nice sweetness.
