Cream Puff Cake

Such a crowd-pleasing dessert and so easy. I also added melted chocolate chips to the top of the base and used the icing from Eclairs II for the top -- which I think is KEY! Herhsey's syrup wouldn't do it justice, however the eclairs icing does not spread well, so it's difficult to make it pretty. Made it for a Labor Day picnic and will definitely make again.

Broccoli with Garlic Butter and Cashews

Yum! I steamed the broccoli and added it, along with carrots, mushrooms and onions, directly to the saute pan with the sauce. Served it over rice and my husband says it's a keeper!

Delicious and easy. I used a 16 oz box of fresh spinach and two cans of beans. I ran out of cumin so punched it up with a little lemon pepper.

Oh my goodness! This is the best quiche I've ever had. I made it yesterday for an early Easter brunch for a bunch of friends and they loved it. I will definitely be making this again. There is no need to change a thing.

Coconut Macaroons III

This will be my recipe for macaroons from now on. THey come together so quickly and easily - without the hassle of egg whites, which are commonly called for in other macaroon recipes. I dipped some in melted milk chocolate... delicious!

Vegan Chocolate Cake

I made cupcakes with this recipe for my daughter's first birthday and they were great. The vegans loved them but any non-vegan would not know there are animal products missing. Save a cow - try these!

Peanut Butter and Banana Smoothie

Very good and very filling. I didn't add the honey and didn't miss it. I think I'll make this often for a healthy, quick lunch! Add a few ice cubes if your banana isn't frozen.

Quinoa and Black Beans

This will be going into weekly rotation in my house. It's delicious. I added a can of diced tomatoes as one reader mentioned and it was good with and without them. In fact, I think you could add various veggies to this and make it your own. I would have thrown in shredded carrots if I had any. Alas, it was grocery-shopping night and the cupboards were near bare! I didn't use cilantro or onion (ran out) and it as still perfect.

Grandpa McAndrew's Irish Soda Bread

I didn't have a skillet, or proper pan to cook this in, so I just formed it the best I could and baked it on a cookie sheet. It was tasty enough, but a bit flaky, like a biscuit. Didn't seem to have the dense quality of the usual Irish soda bread. I added some caraway seeds, too.

Sam's Famous Carrot Cake

This is THE BEST carrot cake! I am not a huge carrot cake fan but decided to make this for Easter. My mom said I might have to make this for every holiday. I did simmer the raisins in orange juice which plumped them up and brought out the flavor. This cake is divine!

Dark Chocolate Cake I

I think this will be my "go to" chocolate cake recipe. It was fantastic and an impressive three delicious layers. Frosted it with vanilla buttercream (from the Magnolia Bakery cookbook). I would make this ahead because I find it better the next day.

Luscious Buttercream Frosting

Delicious! this will be my frosting my now on - no more store-bought with all the mono- & di-glycerides and other ! This was the first time I ever made buttercream and I was nervous about choosing the right one, having poured over many recipes for it, all with various measurements of the same ingredients. This one was simple and perfect.
