Cauliflower-Cheese Soup
I too, made some changes, so the rating reflects the soup after I fiddled with it. I didn't use water or milk, but 1 and a half (or so) 946ml cartons of chicken stock. I chopped a whole head of cauliflower, 1 bunch celery hearts and 1 white onion, simmered them in a small pot with enough broth to cover until soft. Then I put it in the blender till smooth, in the meantime made a roux and added a carton of broth to it, then stirred in the pureed veggies. (I totally omitted the potatoes and carrots. )Then I added 1 cup shredded asiago and 1 cup shredded parmesean (no cheddar) and served it up with some fresh crusty bread. Delicious! The broth made it salty enough for us and the cheese kept it tart. It was very creamy and smooth, even without milk or cream. I should also mention that my husband hates veggies, but loved this soup.

Pizza Dough II
our 'go-to' dough. Makes 6 excellent calzones or 3 great pizza shells. Pizza night at our house comes once a week. This dough is a favourite for the whole family, is easy to make and stays tender and chewy inside while crispy on the out. I have subbed 1/2 cup ground flax seed in place of the whole wheat flour and this makes the dough really easy to handle and the finished crust nice and chewy. I also only use a/p flour as it's all I ever have on hand. No probs to be had with it at all.

Classic Waffles
After testing s few waffle recipes we've declared this one our favourite. It crisps very nicely on the exterior while maintaining a chewy, not doughy, centre. I do add 1/4 cup ground brown flax seed to the recipe and substitute 1/2 cup of the white for whole wheat flour just to add some fibre. I don't feel this affects the texture or flavour at these amounts and don't need to add any extra liquid to compensate either. This has become the staple for 'Waffle Sunday', a tradition for 9 months since I came across this recipe, and nobody's sick of it yet! Final note: I double the recipe and freeze the rest for quick school morning breakfasts (pop in the toaster) and the kids also love them in place of bread for 'waffle sandwiches' in school lunches.
