Chicken Chimi in the Oven

These would've been excellent if they weren't quite SO spicy. I'm a baby about spicy things! My husband loved them though. Very easy to make, too.

Chocolate Rum Balls I

Excellent rum balls!!! Loved these. Omitted the walnuts because of family allergies and they were still delicious. I would like to note however that the recipe only made about 24 walnut-sized balls, not the 48 the recipe claims.

Colored Sugar

Sweet. Let the sugar dry on some tin foil or something after you color it, and if it's got clumps run it through the sieve or sifter. Perfect!

Spaghetti Carbonara II

Absolutely amazing! I made this as written and added prosciutto and chicken crisped up a little in a pan, and it was DELICIOUS. I had to make myself stop eating it! Only thing was I probably will just skip the bacon next time and go straight to the prosciutto and chicken-I liked them much better in this recipe.

Chicken and Cheese Stuffed Jumbo Shells

The shells and filling were a little messy, but oh so tasty! I added little strips of prosciutto on the inside of the shells, and I believe it added a lot to the flavor. Next time I'll also go ahead and make my own sauce, instead of using the premade stuff.

Simple Hamburger Stroganoff

Getting a three because it was edible and my hubby liked it. There was little actual flavor, and the noodles had a very weird texture because of the sour cream. Next time I'll save the beef for better purposes instead of making this. Easy? Yes. Did it make me sick later? Also yes.

Bev's Chocolate Pie

I followed the recipe down to the letter, and it was WAAAY to sweet! I was looking for something with a similar consistency but not as overpoweringly sweet. Also, when I refrigerated it, it got to about the consistency of concrete-you'll want to let it sit out a little bit before cutting and consuming.

Creamy Chicken Rice Soup

I decided I didn't like the milk at all. I had roasted a chicken the night before for use during the week and made my own stock according to the article on this website. This recipe was lacking something, it seemed-next time I'll try adding a bouillon cube, cutting out the milk and wine, and hopefully I'll have a slightly more basic soup. EDIT: The day I made it, this soup was so-so, but for days afterward I've heated it in the microwave and it is delish! Definitely better the second day. :)

Baked Trout Saratoga

While this recipe did indeed cook a decent trout, that's the best I could call it: decent. The tomato mixture itself was delicious but the trout was a little dry and didn't absorb the taste of the tomatoes very well. I had high hopes for this recipe and was pretty disappointed.

Chicken Spinach Quiche

Quiche didn't set properly for me (possibly due to the frozen pie shell tin I cooked it in) and was soupy! Next time I'll reduce the milk as some other reviewers suggested, be sure to leave it in a while longer, and will shred the chicken-the cubes just sort of disrupt the flow of the thing. :P Will come back and re-review/rate recipe after second attempt!

Shrimp Fried Rice II

Some minor changes: make the rice the night before, so that it gets a chance to dry out and doesn't make your fried rice a sticky mushy mess! Also, partially or completely cook your egg in a seperate pan, as mentioned before. Finally, this recipe, when made correctly, is excellent! EDIT: Well I managed to make it right that one first time and have never been able to make it right again! I'm going to try leaving the rice in the fridge for two days instead of overnight and see if that helps. Ciao!

Carrot Cake III

Five stars for the cake itself!!! I'd probably only give it four stars if this was just the icing recipe-it was waaaay too sweet-but the cake was delicious. Next time I'm considering simply using a light sugar glaze instead of all-out frosting.

Balsamic-Glazed Salmon Fillets

Four stars!! This recipe is absolutely fantastic IF you have fresh salmon. If you don't it's very hard to keep down. My husband and I made it with couscous and enjoyed it very much. :)
