Baked Flan
This easy-to-make dessert has a texture like velvet and was a huge hit at my dinner party. I will definitely make this again...and again.

Strawberry Lemon Trifle
This is one of my favorites, especially for potlucks. I make a reduced fat and calorie version by using sugar free pudding, unsweetened strawberries sprinkled with a little Splenda, and sugar free angel food cake. I top the whole thing with sugar free whipped topping. Unless I tell, no one realizes it is sugar-free, and it's a big hit with my diabetic friends.
