These were delicious! I'm not even a huge fan of apple, but they were great! I'm allergic to eggs and had to use an egg substitute, but they still turned out perfectly.

Peanut Butter Chip Cookies III

These cookies actually came out tasting ok. But not because of the recipe. I'm not sure what other people did that turned out so well, but when I mixed this all together, it wasn't just dry, the mixture was almost the consistency of straight flour. I checked the ingredients 3 times and I'm sure I didn't leave anything out. I would start with 1 cup flour and go up from there. I more than doubled the peanut butter, added almost a full stick of butter extra, and then gave up on that and just started adding milk till the consistency was that of cookie dough. They turned out great in the end but I think that was just luck.

Vegan Pancakes

These were really good! I added chocolate chips to mine. They stuck to the pan really badly though. I had to douse the pan in cooking spray every time I added more pancakes or flipped them. I've never had to add more spray when I flip before! But, as long as you use enough cooking spray these should turn out great!

Strawberry Vinaigrette

This is pretty good! I have no idea if the proportions are right. I only had 4 strawberries so I basically just blended those up in the food processor and then added everything else until the proportions looked right. I tend to use a LOT less oil in my dressings than recipes call for so I probably didn't quite get the same proportion on that one. Anyway, I used the dressing for a lettuce/apple/walnut/brie/red onion salad and it was very good! Oh I also added some cilantro to the dressing because I had some on hand that I needed to get rid of, and that was a tasty addition.

Three Cheese Garlic Scalloped Potatoes

Mmmmmmmmm this was good! I made the recipe pretty much as stated (I didn't measure anything because I wasn't sure how many potatoes to use) and I didn't have the right cheeses. But, this turned out great! I think it could have cooked just a tad longer, but I was too hungry to let it! Anyway, I recommend making this recipe exactly as stated, it's delicious!

These are really good, although I suggest making them with peanut butter cups instead! I'm not really a big caramel fan. I used the same base for the cookies though and it's very tasty.

Shrimp, Leek and Spinach Risotto

This was delicious! I followed the advice of other reviewers and modified the rice/liquid ratio. I cut the rice in half and left all the other ingredients the same. However, there was WAY too much leek in the recipe that way! I would suggest halving the rice and the leek, and leaving everything else the same, as the other proportions seemed just right. The taste was great though, and even though I was skeptical about the lack of salt in the recipe, it was not needed (due to the broth, I'm sure). I will definitely make this one again!

Grill Dough

I've never tried grilling pizza before, so perhaps it just takes experience, but that was a bit ridiculous. I added extra flour to this recipe but I think it was still a little too sticky. Also, I had no idea how thin to roll out the dough since the recipe didn't say, and I think I made it too thin. Getting it onto the grill was an absolute pain, and let's just say I ended up with many small pizzas when I started with only one. For anyone else inexperienced in grilling pizza, I would strongly suggest making small, personal-sized pizzas, because they would be much easier to manipulate on the grill. Other than that it tasted ok in the end I suppose, but it wasn't quite worth all the trouble.

Classic Chocolate Cookies

The taste of these cookies is ok, but they came out dry and cakey. I only baked them for 10 minutes, since 13-15 seemed a bit much, but I think they would have been better with an even shorter baking time. Either way, if you're looking for cookies, not cake, then stay away from this recipe.

No Bake Chocolate Oat Bars

These were really good! I took the advice of a couple of other reviewers and cut the butter to 3/4, and increased peanut butter to 3/4. I didn't have quick cook oats so I just let the mixture cook for a while longer and it worked fine. Also, I put it in the freezer instead of the fridge so it would set up sooner! It was firm enough to cut in about an hour and a half.

French Breakfast Puffs

Anyone who said these weren't light/fluffy enough must not have followed the directions very well. In fact, the bottoms of them were so fluffy that they soaked up the melted butter like a sponge, so 6T was only enough for 7 of my 12 puffs. I think I'll try something different with the other 5, though, like spreading Nutella or jelly on them, maybe. We'll see. These don't taste exactly like a donut to me, but they're close enough to satisfy the donut craving I was having!

Beef or Chicken Enchiladas

This was really tasty! I didn't have any chilis so I had to leave that out, but I used pepperjack cheese instead of regular jack, so it was still a little spicy. I also added cilantro to the sauce, which was a really good addition! I only give the recipe 4 stars because I think it does need the cilantro. I also used chicken instead of beef, cooked with fajita seasoning.

Slow-Simmered Chicken Rice Soup

Oh my. So, I wanted to make extra soup, and decided to make 1.5 recipes instead of 1. Good thing I didn't double it. Opened the crock pot to it literally full of rice mush. Not grains of rice. Mush. The flavor is ok but, wow, this is just ridiculous. There is no liquid left AT ALL. Just mushy rice. Maybe wait until the end to add the rice?

Frosted Pecan Butter Cookies

These are really tasty! I made a few modifications to the directions, but not the actual ingredients. First, I didn't refrigerate them. I used a cookie scoop, and since I wasn't really handling the dough except to dip the ball in the pecans, I didn't find it was necessary to stiffen it up. I also didn't flatten them just because I was lazy, and another reviewer said it wasn't necessary. She was right, they turned out fine! They don't flatten any on their own, so if you want a flatter cookie, you will have to leave that step in. For the frosting, I think I could have made less. I gave each cookie a very generous dollop of frosting and I still had a bit left over. If you like a lot of frosting, make the whole recipe, but otherwise I think 2/3 of the frosting would be plenty. I did use the lemon in the frosting, and I didn't think it was too lemony, but I also think the cookies would be just as good without the lemon, and using milk in place of it. Just depends on what you're in the mood for at the moment! =) Be careful handling the cookies as they are a bit crumbly.

Baked Potato Soup

I thought this was a really good recipe. However, overall I think I prefer the basic, plain, no-fuss type of potato soup. This was a nice change. I especially liked the addition of a little hot sauce, that added a nice zing. I did as another reviewer suggested and used half basil/half thyme in place of the 1 tsp. basil. I thought that turned out very well. I also didn't add bacon because I didn't have any, but I'm sure that would have made it even better!
