Country Fried Squash
Despite my failed attempts to make this healthier, it turned out really good! I originally tried to bake it but that didn't work at all (after 20 minutes the bottoms were still not getting crispy/golden), so I ended up frying them anyway, and they still turned out great! I did follow a couple of reviewers' suggestions. I cut the milk in half, added hot sauce to the egg mixture (which didn't even add a hint of spiciness so I won't bother next time), and added extra salt/garlic powder/onion powder. We had to still add some more salt after frying but they were REALLY GOOD. I'm not usually a huge veggie person but I think I liked these better than fries! Might try them with bread crumbs next time and try baking them that way, but these are definitely worth a try.

Tasty Fried Eggplant Balls
I am rating this purely on taste, because I didn't quite follow the directions. I tried making patties out of them, and instead of breading and frying, I baked them. They were way too soggy for that to work and they fell totally apart. However, they tasted really good! Next time I will try adding the flour to the mix before trying to bake them. I'd still rather have them in patties and baked rather than fried, and they did taste really good.

Authentic Thai Cashew Chicken
This was pretty good. I pretty much followed the recipe plus the additions that elizabeth101 mentioned. Also I cooked the chicken separately and used vegetable broth since my husband is a vegetarian. I just cooked everything else, then left a little sauce in the skillet and cooked the chicken in that, and added it on top of my portion. I think it would have been a little bland without the changes.
