Sour Cream Chicken Enchiladas
GREAT!!! Made a few minor changes: substituted Monterey Jack cheese for cheddar (family preference). Also, only put in as much cilantro as seemed appropriate for our taste (about 1/3 bunch). Did not use quite all the sauce and did not cover while baking.

Crazy Cake
We like this cake the best served with a butter sauce rather than icing. This is the first thing my mom taught me to bake. Quick, easy and great served warm al a mode.
